If you want to sub out the pumpkin seeds just be aware of the texture will be altered depending on what nut or seed you use as some have more fat in them naturally.
Pumpkin seed is the seed we used in the dessert as we feel pumpkin seeds tend to get neglected. We love them and use them the most.
Most of the recipes out there use almond or walnuts, which those are great too. But pumpkin seeds are just as great, They add great flavor and full of nutrients ranging from magnesium and manganese to copper, protein and zinc. You could call them nutritional powerhouses.

Can you sub something with less sugar than maple syrup… I realize it’s not refined but it’s still very high in sugar. I have a honey stevia blend that might have the same consistency…
Or maybe use so delicious coconut whip cream for the center instead and freeze them?
