This past weekend sure felt like Christmas. It was chilly!
We enjoyed a lovely warm fire Saturday night.
Plus Gary’s parents were in town for the night to see Madison and attend a family Christmas party at a country club here in town, which Madison had a blast at.
It was a whole new territory for her to explore and have people to stare at. There was a set of stairs for her to practice climbing. She loves stairs.
We had a few minor tantrums when I would remove her from touching something or trying to go down the stairs. Then she saw other kiddos playing outside so of course she wanted to be part of it. Luckily the sun was out to help with it being cold.
We will get back into our typical workout posts for Mondays but we had a few more holiday recipes that we wanted to share with you!

Easy Raw Eggnog Pie Recipe. If you or someone in your family loves eggnog, but cannot have dairy or eggs add this easy dessert to your Christmas baking list!
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: makes an 8 - 9 in circle pan 1x
Ingredients
Crust
- 1/2 cup nut or seed flour
- 1/2 cup coconut flakes
- 3 tablespoons mesquite flour (could do more nut/seed flour)
- 1 tablespoon flaxmeal
- 1 teaspoon cinnamon
- 2 tablespoons molasses
Eggnog filling
- 2 1/4 cups cashews, soak and rinse
- 1/2 cup coconut milk
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup coconut oil, liquid
Instructions
To make crust
- Place all ingredients into a blender or food processor. Pulse until combined.
- Press crust into a parchment lined 8 in or 9 in circle pan.
- Set aside.
To make eggnog filling
- Place all ingredients in blender and blend until smooth.
- Pour filling over crust.
- Place pie into refrigerator and let set overnight.
- Remove pie from fridge.
- Carefully remove pan from pan.
- Slice and enjoy.

This pie looks really good! I have never heard of an eggnog pie before. I never knew you could put crumbs in a blender either. good to know!

Hi Ladies! You claim this recipe is paleo but the first ingredient is 1/2 cup flour. Was that supposed to be a gluten free flour or paleo flour (like almond)?

Yes Victoria it is 1/2 cup of any kind of nut or seed flour that you like, almond would be fine. We used hazelnuts. We updated the recipe to say that.

Molasses is a form of sugar – a by-product of the refining of sugarcane or sugar beets into sugar. it is a thick dark liquid sugar.
