What sugar do we prefer?

Our top two sweeteners are stevia and maple. Next up would be coconut sugar, dates, and honey. Although if we are baking we do not use dates or honey, we use those only in raw recipes.

We are happy to announce that today’s recipe is sweetened with stevia!! Since stevia had the most votes we have a feeling many of you will enjoy this recipe!

We are super stoked to not only be sharing a sugar-less cake recipe, but…

One lucky purely twins family member will have the chance to WIN A FREE Vitamix S30 personal blender. Details on that below.

And as we have mentioned, we have one a-m-a-z-i-n-g vanilla cake recipe to share. It is sweetened with stevia and has just 7 ingredients plus a delicious 2 ingredient frosting!

This vanilla cake reminds of pound cake, but healthy!  It dense and moist. Full of flavor. And super easy to make.

purelytwins vitamix giveaway making vanilla cake

We actually made this delicious cake in our own S30 vitamix blender. You really can make just about anything in it! First we filmed us making homemade coconut butter, which only took 1 minute!

We look forward in making more homemade nut butters, especially chocolate pistachio butter!

As we mention in the video if you cannot find plantains, here are some ideas to do:

1. Try a green/yellow banana

2. Try 4 eggs instead 3 if you use a more ripe banana or sweet potatoes

3. If you don’t use a plantain you and use something else you might have to add in additional starch, like arrowroot or tapioca to the batter

4. If you cannot have coconut butter, try cashew butter if you want to keep it a neutral vanilla flavor

We have not tested any of these, so unsure of the final outcome.  We have not tested this to be vegan (egg-free) so unsure how flax or chia gels would turn out. Sorry.

How to make a stevia sweetened no flour vanilla pound cake recipe

We love this cake. It will quickly become a favorite no-sugar cake.

It does have a slight plantain flavor to it since we used stevia. But we find it to be amazing especially with the 2 ingredient coconut butter frosting on top and of course… sprinkles!!

I’m a total chocolate girl! One hundred percent dark and rich. This cake looks delicious though, I actually plan on using the frosting for a sweet potato cake today! Thanks!

  2. Sorayya says

I would LOVE to have this vitamin! The cake looks amazing :) I like a mixture of chocolate and vanilla with sprinkles.

  3. sophie says

    Vanilla. Vanilla. Vanilla. Vanilla. Vanilla.
NO sprinkles (they might mask all the vanilla that I love!)

Thanks for doing such a great giveaway!

  4. Sara says

For cake, I could go for chocolate with either no icing or a peanut butter icing like my mom used to make OR vanilla with chocolate icing. Hold the sprinkles though!

  5. Bahja says

I love both, but vanilla has always been a favorite of mine. It’s so classy and the flavor doesn’t take over the other ingredients in the cake or the frosting….where sprinkles are ALWAYS welcome. I’m totally a texture person, and the soft crunch of sprinkles on a moist cake, makes my day:)

  6. says

My first choice is usually chocolate cake, but put coconut butter frosting on top of vanilla cake and I’m sold. And y’all definitely sold me the second you mentioned it reminds you of pound cake. YUM.

  7. Brenna B. says

I love a very moist chocolate cake, but when it comes to vanilla that is always a winner! I personally prefer no sprinkles.

  8. says

Oh man! This looks amazing! I’ve always been more of a vanilla cake fan (particularly FUNFETTI!) but after discovering a paleo chocolate cake recipe that my family and I are LOVING that’s been a favorite. I guess, I could go either way but there should always be sprinkles of some sort. They’re just so fun! :)

  9. says

If it’s a cupcake, I prefer vanilla. If it’s a slice of cake, I like chocolate :) #highmaintenance And I’ll never turn down sprinkles.

  10. Sara S says

I usually would pick chocolate over vanilla, I LOVE chocolate!!
I do love a good healthy vanilla cake too though :)
And sprinkles make everything better! (As long as they aren’t the waxy ones that leave residue on the roof of your mouth) Chocolate sprinkles would be my top pick

  11. says

    Liked and shared on facebook.
    Pinned it.
Here is my comment: Chocolate cake! No sprinkles. BUT this cake sounds fantastic right now because I’ve been staying away from chocolate (health reasons). I CANNOT wait to try it.

  12. Julie W says

I like both flavors, but I LOVE vanilla cake! Sprinkles are pretty, but not a necessity. Now icing, on the other hand, is an absolute must! And this cake and icing recipe look fab! I’ll have to try it. Great giveaway!

  13. amanda says

I love chocolate but for a cake a prefer vanilla! This recipie looks perfect cant wait to try it…i was all ready thinking what a perfect base…one could add lemon…orange…or even turn it into a yummy cinnamon coffee cake :)

  14. says

    Hey guys,
I am a huge fan of chocolate cake but a good vanilla cake goes a long way as well! :) I’d never say no to either one (as long as I knew they were semi-healthy). I’m not a huge fan of sprinkles, tbh, but sometimes they do give a good flavor and I like them more when paired with a thicker frosting (who knows why). Anyway just wondering would it be possible to make this cake with applesauce versus the coconut oil? I can’t have coconut…or at least I don’t want to chance it as of yet.

    Thank you,

  15. Sarah Khaled says

This is such an amazing recipe! I cannot wait to try it especially that it has no flour and only plantain. I wonder how it will taste with banana though as I don’t have plantain where I live. Anyway, usually I’d say chocolate cake but now I really feel like vanilla and noo sprinkles for me :)

  16. Deb says

Chocolate, all the way! Preferably as rich as possible, with a very rich chocolate frosting or ganache to top it off :)

  17. Carey Reynolds says

Wow, that’s a lot of entries!
I love vanilla cake the best, it’s cake so you might as well go all the way with the sprinkles and I would love the chance to try the Vitamix blender.
    Thanks for the giveaway!

  18. Moriah Thorpe says

Only US readers!? I’ll pay for the shipping to Canada if I win!! hehe. PS. making this cake tonight yumyum!

  19. says

Typically I’m a chocolate girl, but this post totally sold me on VANILLA! <3 Thank you girls for always inspiring me to try new things! You're both beautiful, inside and out!
Bless you both! Oh, and I'm sharing on Facebook and Twitter as I type this… I've been coveting a Vitamix for SO long now! I just can't seem to find the funds… winning one would totally be a blessing!

  20. Florencia Martinez says

Both! It really depends on my mood :) but I have to choose ill probably do chocolate, oh and no sprinkles.

  21. Kiersten says

I’m more of a vanilla fan and I like sprinkles as long as they are the all natural kind. I don’t love the flavor of them but they sure do make cakes look pretty!

    • Taylor says

This cake was great! My plantain was very green, I couldn’t even peel it I had to cut the skin off. Next time I might add a little bit of agave to make it a little sweeter, but it was delicious!

  22. says

OMG, I would LOVE to win! Thanks for the giveaway :)

I love BOTH types of cake, but vanilla with sprinkles sounds delicious. A good chocolate cake is yummy too, but I would rather top it with ganache and not sprinkles.

I would make pesto, smoothies, avocado pudding, and plantain bread with my new vitamix S30!!!

  23. Lynette Jimenez says

I’m definitely craving that cake in its vanilla flavor! Since the cake itself is so healthy I probably would add a couple sprinkles because they give it a nice touch of spring/summer vibes!

  24. says

i can’t wait to try this cake! i finally found plantains so i’ll have no excuse!

to answer your question: chocolate. always choclate. with sprinkles, but i prefer non-pareilles. ;)

  25. Jaime says

I usually like cakes like chocolate ganache and without sprinkles, but I’m excited to try this recipe as vanilla :)

  26. Christina says

Chocolate anything is awesome, but I prefer vanilla cake…of course I would never turn down a piece of cake, whatever the flavor. ;)
    No sprinkles!

  27. Kim C says

Oh yay! I’m always looking for ways to use plantains. :)

I love vanilla cake best! With sprinkles of course! ;p

  28. Amy Friel says

I’m not normally a cake fan (I prefer the icing:) but if I had to choose definitely chocolate with sprinkles!

  29. says

Vanilla cake, no sprinkles sounds pretty good right now!
Just curious, do you buy the vanilla bean powder or do you make it yourselves? If you make it, how does one do that?

  30. says

Last week I made the most incredible cake (not healthy and definitely not sugar free): chocolate stout cake with sour cream frosting. There was something like 6 sticks of butter in it. It was so good, and it was one of those cakes that was so dense and rich that you couldn’t eat more than a few bites at a time.

  31. says

Tweeted! Pinned! and commented on the video. Thanks for the giveaway. I’ve wanted a vitamix for years and just can’t afford one. :(

  32. Jen says

This looks so yummy, never would have thought to use plantains!
I think I would make a frosting out of carob and avocado to put on the cake, looks so yummy :)

  33. Deanna says

Omg I would love to win a vitamix!!!!!
I love vanilla cake. With sprinkles, or without….that really doesn’t matter, as long as there is lots of frosting!!!!!!!!

  34. Leah says

Definitely a vanilla cake with sprinkles kind of gal! I would love a Vitamix to make cake batter and maybe some smoothies to balance everything out! :)

  35. Monika says

Personally if i had to choose between chocolate OR vanilla (i can’t believe you’re making me choose here) I would go with a vanilla cake. BUT if you offered me a vanilla cake with chocolate frosting and sliced strawberries and colorful sprinkles I would be one extremely happy girl :)

  36. Maria says

What an awesome giveaway! Thanks, Lori & Michelle :)

I think it depends on my mood, but I feel like I mostly want vanilla cake/cupcakes. With sprinkles, ALWAYS.

    • Margot C says

::Sorry:: forgot the rest! I like Chocolate cake best, and now I see where you got the sprinkles too. I must buy those!

btw: I commented on your YouTube Video as AnnaZed10.

  37. Elisabeth says

I prefer chocolate cake with no sprinkles, but this vanilla cake with sprinkles looks pretty fabulous. You’ve outdone yourselves again, ladies!

  38. Heather says

I prefer chocolate…. BUT if the vanilla is right then I can’t go wrong with it! I could go with or without sprinkles.

  39. Tara says

I’m a chocolate gal all the way! I bet this clever recipe could go chocolate with some tweaks or sugar free mini semi sweet chips!

  40. Michelle says

So many comments haha! I’m down with chocolate cake…but I’d take any flavor of frosting (coconut based?!)…and I’ve gotta say I’m one of those weirdos who isn’t really a sprinkle fan:O I don’t like the weired little crunchy bits:P Wahoo for Vitamix-they’re based in my hometown!!

  41. Ashley Burrough says

Straight up chocolate cake has always been a favorite of mine, but the vanilla is classic—and so pretty with the sprinkles. This recipe looks delicious, guys, great job!

  42. Isaac says

The cake looks very good and I will have to try it in the future! Coconut butter is one of my favorite foods!

  43. Jasmine says

Vanilla is my absolute favourite I just love the delicate flavour and the vanilla bean seeds look so pretty! I prefer without sprinkles but I reckon mulberries will taste so delicious sprinkled on top!

  44. Emily says

I’m usually a chocolate all the way girl, but I love vanilla birthday cake with sprinkles- it brings me back to childhood!

  45. Viviana says

I usually prefer chocolate but this sounds amazing. No sprinkles for me and I hope I win!!! Tahnaks a lot :)

  46. says

I am allergic to apples and I am wondering if you can use any kind of vinegar in this cake like rice, champagne, fig, white balsamic vinegar? I am also very sensitive to coconut butter, could I substitute cashew butter instead? I know the flavor would be different, but…

  47. LindaS says

Normally I would say chocolate, but if this cake is anywhere near as good as your cinnamon bun one with the plantains, I’m in :-) and sprinkles give it a nice crunch!
I do have a question too…can I use vanilla extract in place of vanilla bean powder? I don’t think I could find the powder and I know vanilla beans are very expensive! Thanks :-)

  48. Anne says

Not sure I could pick between the two! But if I had to… I guess I’d say Vanilla (with sprinkles in the cake mix) because funfetti is probably my overal favorite.
I am having a sprinkle wedding cake so I think my answer to that question is pretty clear!

  49. Tracy says

Vanilla cake for sure and sprinkles always make things better! But really, any cake is pretty fantastic! Thanks for the recipe, I pinned it to try soon!

  50. says

I’m in LOVE with this cake- OMG! So delicious sounding!:) Plus, I’d take vanilla over chocolate any day when it comes to cake. I love how coconut butter makes the most amazing frosting:) Great recipe! Thank you for this giveaway, I’ve been dying for the S30!!:)

  51. Monika Borkowski says

I like chocolate cake better BUT if it’s a fluffy white cake, like this one, I could definitely convert to vanilla! I love the variety and creativity you always have with all of the plantain recipes. And of course, I love you girls and miss you and get a sneak peek into your life through your adorable Vlogs. :) Hugs!

  55. Brooke says

Although I’m usually a chocolate girl, cake is the exception ;). I like vanilla! And how could anyone say no to sprinkles?!

  56. Lacey Carlson says

I love vanilla cake with sprinkles, but I’ve also really become a chocolate lovin girl – especially with chocolate-avocado mousse or a date-based german chocolate frosting covering it. Actually just give me a bowl of either of those two frostings and cover it with sprinkles and Im a happy camper:)

  57. witchintheditch says

This cake is amazing – I can’t believe it comes out so good with no flour or baking powder to help it rise! I’m totally eating it right now for breakfast.

So… just fyi – not having a Vitamix (like most I assume? ;) Here’s advice on how I had to do the coconut butter – it’s a little harder in a small food processor:

For starters *don’t* put the coconut in a paper bag if you buy in bulk – (my mistake) – the paper soaks up the oils and you need those to help it liquify! Use liquid (instead of powdered) vanilla & add it in to get the process going. Drizzle in melted coconut oil as you’re mixing (prob used less than a tbs altogether)… it took about 10mins to get it to a sticky (but clumpy) consistency. It worked perfect though once pureed with the plantain and eggs (I just used egg whites – works too). It made a pretty nutty frosting – which was really good.

I think the sprinkles are the perfect tiny amount of sugar to stop you from having cravings after eating something sweet without the *kick*! Maybe that just happens to me…

    Re-pinned it!

  58. JoJo says

I love both vanilla and chocolate.. it really depends on my mood at the time :-)
I definitely like having some sort of sprinkles though, the texture and flavor is so much better that way!!

  59. Jordan says

This recipe sounds fantastic, I can’t wait to try it! I’m definitely a vanilla cake kind of gal. Sprinkles optional, frosting always lol

  60. Gabriella Schneider says

Usually i prefer chocolate cake. however, your recipe is definitely worth trying for my birthday in august!

I’m not generally a huge cake fan…but I just found a gluten free company in kuwait (where I live) that makes the most divine melt in your mouth chocolate cake! And no frosting or sprinkles!

  62. Aly says

Why limit yourself to chocolate or vanilla, marble cake is the best of both worlds! And you can never go wrong with sprinkles, everyone loves being a kid at heart.

  63. Jordan Leigh says

okay I know I’m about to have my woman card revoked buuut… I don’t like chocolate :O I know, I know, blasphemous. So vanilla all the way for me! And always sprinkles, they just make everything so girly and ten thousand times more awesome. Happy birthday week beautiful ladies! <3

  65. Lauren Camenga says

Oh! And I commented on your video. Commented on here. And am tweeting about it. Don’t have a Facebook unfortunately though. I do have Instagram! Yay :)

  66. RattatatNat says

Not sure if I can win being in Australia, but I’m certainly a chocolate girl for most things, but when it comes to cake vanilla often wins…add some chocolate frosting and amble a little sprinkled chocolate and well you have a perfect combination.

  67. ramblingcreations says

I love chocolate cake better than vanilla cake. And no sprinkles. That cake does look super yummy! I’ll have to try it!
