On my way over to Lori’s I was getting caught up on one of my podcasts that I like to listen to — Ben Greenfield Fitness podcast. I was listening to the one about anxiety. And what Ben said at the beginning really hit home for me, as I never really had anxiety before until a few years ago. It seems to come with age as the older we get the more stress and responsibility we feel leading us to always be thinking of what we should be doing or what we shouldย have accomplished already. The doctor on the show mentioned that the word SHOULD be taken out of our vocabulary as it brings anxiety.

As I sat there in traffic I thought about that statement. How true. Now as I get older I notice myself thinking about everything I wanted to have accomplished by now in my life. The pressure of others judging me for things I should be doing… the pressure I put on myself for not reaching certain goals.

I could feel me getting anxious. Nervous. Stressed.

Do you know what helps me when I have anxiety?

Pancakes.

Especially ones with a raspberry cream.

Haha, okay, pancakes might not help completely but they should make me feel good! They bring back happy memories, therefore I am more calm. Take that anxiety.

It feels like forever since we’ve made pancakes as waffles have been our thing lately.

Pancakes are coming back.

But really, do pancakes ever go out of style?!? Probably not.

After a few recipe trials we are happy to say that these fit the purely twins bill of approval!

How to make hemp protein grain-free, gluten-free, low sugar chocolate pancakes with raspberry cream.

Substitution ideas:

Replace arrowroot starch with corn starch, tapioca or potato starch.

Replace cocoa with carob for those that can’t have chocolate.

Replace hemp protein powder with your favorite protein powder or nut meal.

Replace coconut milk with any milk or non-dairy alternative you like.

We have not tried it with a flax gel to replace egg to make it vegan, but we think it should work.

Quick simple healthy chocolate waffles with a delicious naturally sweetened dairy-free raspberry cream. Perfect pancakes for brunch. Light and fluffy filled with protein and healthy fats to fuel you for the day.

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes
  • Yield: 12 medium pancakes 1x

Ingredients

Scale
  • 1/4 cup arrowroot starch (1oz)
  • 1/4 cup cocoa powder (1oz)
  • 6 tablespoons hemp protein powder (1 1/2oz)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 810 drops liquid stevia
  • 1 egg
  • 1 tablespoon coconut oil, liquid (1/2oz)
  • 1/2 cup coconut milk (4oz)
  • 2 teaspoon apple cider vinegar

raspberry cream

  • 1 medium banana
  • 1/2 cup raspberries
  • 45 tbsp coconut oil

Instructions

  1. Place all dry ingredients into a large bowl.
  2. Whisk together.
  3. Next add in egg, vanilla, stevia and coconut oil.
  4. Stir.
  5. Next add in coconut milk and apple cider vinegar.
  6. Continue to stir.
  7. Cook pancakes on skillet. A few minutes on one side, then flip to cook the other side.

Raspberry cream directions

  1. Place all ingredients into a blender. Blend until creamy.
  2. Scoop cream onto pancakes.

  • Serving Size: 1-2 servings

What I was little, we had some raspberry bushes growing in my landlord’s yard. I would go pick them and eat them right off the bush! Love raspberries just plain, or in a smoothie

These look SO YUMMY. Per the usual:) And as a matter of fact I do suffer from anxiety and panic attacks. :/ Started in jr. high, but they’ve come back with nasty vengeance this year. Trying to control them/not think about them is often a losing battle, and they just come on suddenly. I suppose it might be time to seek medical advice, as it interferes with life…and, dangerously, driving! Yikes. Ok apparently this was confession day? Sorry ladies- hope you’re having a great day!

Oh the “shoulds”… I feel ya! Anxiety is something that I struggle with too, but I have found that it comes when I’m not spending enough time in God’s word and trusting Him with my situations. I def need to check out that podcast!!
