These are so cute – I love the teddy shape – don’t think you get them in the UK but these look worth a try and I have been meaning to try tiger nut flour for ages so perfect combo:)
I love chocolate milk – chocolate almond milk. These looks amazing ladies. I am think I need to enjoy them with a chai tea latte!
These were my FAVORITE childhood cookies ever! OMG! Must!
Looks good! Waiting for tigernut flour to arrive in the mail!
I need to research this TIGER NUT flour more!!!!
YES!! it’s our favorite
do you think protein powder would work in place of the tigernut? or would I need to add a starch of some sort as well?
thanks so much!!
you could try just protein powder, it might turn out. but do a little starch might be a good idea too. maybe do a mx of the two
These are so cute! I’ve been playing around with tigernut flour in some other recipes and I find that the end product is sometimes grainy/gritty/sandy. Do these have a gritty texture? Thanks!
When we have tigernut plain we find it gritty, but when we use it recipes we haven’t noticed it.
Can honey or srevia replace sugar?
You can use another sugar replacement. If you use honey you might not need the coconut milk
How long will these keep? Frozen, Refrigerated, or at room temperature?
They are really cute, and look Yummy. I want to try them for a church bake sale.
Thank you.
We would say about 3 – 5 days. For longer shelf life you could freeze them.
I would love to make these cookies for my daughter. Only problem is I live in South-Africa and shipping/ordering it only the Tigernut Flour will cost a lot and will take time to get here. What else can I use instead of Tigernut Flour?
You can use any gluten-free flour for it
This looks so good! What a great way to still enjoy this cute treat while sticking to a nutritious diet!
Thanks for sharing! Do they keep long?
We would say about a week and longer if stored in freezer and pulled out when wanted to snack on.
