We are excited to share this recipe for a single serving, grain-free chocolate cake that we have been working on for you.

We are on a mission to create more grain-free recipes for you.  Some containing plantains and some without as we have been asked by so many of you. Even though we love using nut and coconut flour in recipes, and you are used to seeing them in every grain-free recipe out there — we like to experiment with other flours.

There are so many new ones popping up on the food market like sweet potato flour, chestnut flour, yucca flour, plantain flour (or whole plantains like we do) and tigernut flour.

Single serving chocolate cake with 2 ingredient coconut raspberry frosting !

With Valentine’s Day just 2 days away. (Crazy!)

Lori and I were discussing recipes and I thought of this one. Since I am single and love cake I wanted something a little special just for me. 

These are what we are calling our emergency cake  for one. 

For those moments in life when you need a slice of cake but don’t want to make a whole one. Now you can quickly mix up this chocolate cake as it’s made from just 6 simple ingredients.  And as we were going over the recipe we first thought of a plantain (naturally) to use.

This cake recipe is low in sugar–we didn’t add any sugar. We relied on the sweetness of the ripe plantain to be the sugar. Plus, we topped it with a super creamy and rich raspberry coconut frosting. This frosting is so easy to whip up in a hurry. Feel free to top your individual cakes with any topping of your liking!

6 ingredient single serving chocolate cake with 2 ingredient raspberry frosting

Tigernut flour worked perfect to replace the plantain!

Both of these cake recipes are super simple and they don’t require many ingredients!!!

Only 6 simple ingredients needed. Most of them you probably have on hand. Perfect for those emergencies.

Plantain chocolate cake with 2 ingredient raspberry frosting that serves 1 (low-sugar, dairy-free, gluten-free, grain-free)

Single serving chocolate cake with a 2 ingredient raspberry coconut butter frosting. The perfect Valentine’s day dessert for one. A healthy and easy gluten-free grain-free dairy-free cake that is made from plantains.

  • Prep Time: 5 minutes
  • Cook Time: 16 minutes
  • Total Time: 21 minutes

Ingredients

Scale

mini chocolate cake

  • 1/2 plantain (50g after being peeled)
  • 1 whole egg
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon baking powder
  • pinch sea salt (optional)
  • 1/2 tablespoon coconut oil, solid
  • 1/2 tablespoon applesauce
  • 1 teaspoon vanilla (optional)
  • few drops stevia (optional)

raspberry frosting

  • small handful of fresh raspberries
  • 1 tablespoon coconut butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel plantain.
  3. Place plantain, egg, cocoa, baking powder, salt, applesauce and coconut oil into a blender.
  4. Blend together.
  5. Pour batter into a greased mini bundt cake pan.
  6. Bake for 15-20 minutes.
  7. Remove from pan once done and allow to cool as you make the frosting.

To make frosting

  1. In a small bowl place the raspberries and mash them into the coconut butter.
  2. Top onto cake.
