Here is your recipe for your super simple 6 ingredient skillet brownie for one or two if your nice 😉

Sinfully healthy and delicious soft moist paleo mint chocolate brownies that serves one. Or if you’re nice you can share with your loved one. Top with your favorite ice cream to make an amazing mint brownie ice cream sundae!! Perfect chocolately sweet for that emergency when the chocolate cravings hit!
- Prep Time: 5 minutes
- Cook Time: 8 minutes
- Total Time: 13 minutes
- Yield: makes one 5inch brownie 1x
Ingredients
- 4 tablespoons raw cacao powder or cocoa (1oz)
- 2 tablespoons hemp protein (1/2oz)
- 1 tablespoon coconut sugar
- 2 drops of doterra peppermint essential oil or 1 teaspoon peppermint extract
- 1 tablespoon coconut oil (1/2 oz)
- 3 tablespoons avocado puree (1 3/4oz)
- *few drops stevia if you want it sweet (optional)
- pinch sea salt (optional)
topping
- a scoop of your favorite mint ice cream
- ** or any topping of your liking
Instructions
- Preheat oven to 350 degress.
- In a bowl place cocoa, hemp protein, sea salt, stevia if using and/or coconut sugar.
- Mix together.
- Next add in coconut oil, peppermint essential oil or extract and avocado puree.
- Continue to mix together.
- Batter will be a little thick.
- Spoon brownie batter into a coconut oil greased 5 inch cast iron skillet.
- Bake for 8 minutes.
- Remove from oven and top with ice cream of choice.
- Or eat plain!

- Serving Size: 1-2 servings
Substitutions:
Replace hemp protein with any protein powder or any nut meal.
Replace avocado puree with sweet potato puree.

I made this delicious brownie for myself tonight. Unfortunately, my peppermint extract bottle was empty! How did that happen?! So I used vanilla instead and chocolate protein powder. It was so fudgy and I topped it with a little whip cream.

For the amount of batter this makes, do you think it would portion off into two ramekins? I was thinking to bake it that way instead of using a small cast iron (which I wish I had, just for the cuteness of it!) because that what I have on hand.

not really sure but this is an estimate – about 400cals, 6-8g protein, about 12g fat and 17g carbs give or take. does not include a scoop of ice cream.

4 tablespoons of my cacao is 2 Oz , should I go for 4tbsp or 1 oz ?
2 tbsp protein also weighs 1 oz and not 1/2 oz as written ?? What should i go for?

We suggest using 1oz for the cacao, and for our protein powder it is 1/2 oz so we suggest following the weight.
