Ingredients

  • 50 grams of plantains (peeled)
  • 1 egg
  • 1 tablespoon coconut oil, semi solid
  • 2 tablespoons cacao powder
  • 1/4 teaspoon baking soda
  • pinch sea salt (optional)
  • 2 pieces of chocolate bar for the filling

Directions

  1. Pre heat oven to 350 degrees.
  2. Place all ingredients into a small blender except the chocolate bar.
  3. Blend until smooth.
  4. Pour into oiled ramekin.
  5. Place the chocolate bar into the batter.
  6. Bake for about 15 minutes.

  6. I made this with a yellow plantain, but it was quite bitter. I had to cover it with sugar and honey to make it edible. A black plantain might be sweet enough, or next time I’ll add some sweetener. The crumb was amazing for no flour!
