We had a great weekend. Lot’s of exciting stuff over here. Lori is still doing good and filming new pregnancy workouts and tips. Plus she is working on a new FREE checklist for moms that want to learn how to prevent and heal diastasis. I am enjoying a rest day today. I am in the process of filming NEW real time workouts for our 4 week bootcamp. The videos were outdated and I am changing some of them up. One change is keeping them all under 20 minutes.

Death by mint chocolate protein cookies. These cookie recipe will blow your mind; they're the best! They're amazing straight from the oven. NO dairy. NO eggs. Gluten-free grain-free double chocolate cookies that are delicious with the perfect combo of chocolate and mint flavors. An easy, healthy dessert that is perfect to enjoy anytime of the day. They go great with coffee!

We use peppermint essential oil but you can use around 1/2 – 1 tsp of peppermint extract.

Double chocolate mint protein cookies (paleo, vegan, gluten free)

Prep Time: 2 minutes

Cook Time: 15 minutes

makes 18 cookies

Double chocolate mint protein cookies (paleo, vegan, gluten free)

Double Chocolate Mint Protein Cookies. Thick, slightly chewy with a hint of mint and loads of chocolate in every bite! Made from just 5 ingredients. An easy, healthy dessert that is perfect to enjoy anytime of the day. No dairy. No eggs.

Ingredients

  • 2 cups coconut flakes
  • 6 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 10 tbsp maple syrup
  • 7-9 drops of peppermint essential oil

Directions

  1. Pre heat oven to 300 degrees.
  2. Place all ingredients into a bowl and stir together.
  3. Scoop cookies onto cookie tray.
  4. Gently press the cookies down to flatten.
  5. Makes about 18 cookies.
  6. Bake for about 15 minutes.

Notes

Other flavor options: 1/8 tsp cayenne 1 tsp cinnamon 1 tsp vanilla

We used a chocolate pea protein in our cookies but use any protein powder you like.

Just know that each protein powder provides a different taste and texture so you might have to alter the maple syrup.

  3. Nice post guys. It really looks delicious. I remember the time when my aunt Merlin cooked a gluten free Choco cake and I ended up eating more than 4 slices. I’m sure I’ll enjoy this tasty Choco cookie.
