Double chocolate mint protein cookies (paleo, vegan, gluten free)

Double Chocolate Mint Protein Cookies. Thick, slightly chewy with a hint of mint and loads of chocolate in every bite! Made from just 5 ingredients. An easy, healthy dessert that is perfect to enjoy anytime of the day. No dairy. No eggs.

Ingredients

  • 2 cups coconut flakes
  • 6 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 10 tbsp maple syrup
  • 79 drops of peppermint essential oil

Instructions

  1. Pre heat oven to 300 degrees.
  2. Place all ingredients into a bowl and stir together.
  3. Scoop cookies onto cookie tray.
  4. Gently press the cookies down to flatten.
  5. Makes about 18 cookies.
  6. Bake for about 15 minutes.
