Ingredients
1 tablespoon coconut oil
1 plantain, sliced or diced
1 red pepper, sliced
1–2 carrots, grated
2–3 large handfuls of fresh spinach
handful of fresh parsley
1 green onion
sea salt
black pepper
Instructions
Place plantain pieces into a medium – large skillet with 1 tbsp coconut oil.
Cook in oil for about 3-5 minutes over medium heat.
