Plantain Vegetable Medley sauteed in one pot makes this super simple to make to serve with dinner in minutes. Vegetables cooked in coconut oil full of incredible flavor!
- Prep Time: 2 minutes
- Cook Time: 10 minutes
- Total Time: 12 minutes
Ingredients
- 1 tablespoon coconut oil
- 1 plantain, sliced or diced
- 1 red pepper, sliced
- 1–2 carrots, grated
- 2–3 large handfuls of fresh spinach
- handful of fresh parsley
- 1 green onion
- sea salt
- black pepper
Instructions
- Place plantain pieces into a medium – large skillet with 1 tbsp coconut oil.
- Cook in oil for about 3-5 minutes over medium heat.
- Next add in red peppers and carrots.
- Continue to cook for a few minutes.
- Then add in spinach, green onion and parsley.
- Salt and pepper to taste.
