Low Sugar Protein Thin Mint Cookies (raw, vegan, gluten-free)

  • 1/2 cup hemp protein powder
  • 1/4 cup mesqite powder
  • 1/4 cup carob
  • 1/4 cup cocoa
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1/2 tsp liquid stevia
  • 78 tbsp coconut oil, liquid


  1. place all ingredients into a bowl and stir together. scoop onto plate or tray, then set in fridge to set. want the cookies to be hard to the touch. keep refrigerator or store in freezer.
