{unbaked} mini chocolate cookie biscotti

Healthy chocolate hazelnut biscotti – think soft cookie but shaped like a biscotti. They are unbaked so SUPER easy and simple to make. They freeze great too. Biscotti cookies made without flour and packed with healthy fats to help burn fat. These are gluten-free, grain-free, and vegan.

Ingredients

  • 1 cup (4oz) walnut flour (ground walnuts)
  • 1 cup (4oz)  pumpkin seed flour (ground pumpkin seeds)
  • 1/2 cup (2oz) coconut flakes
  • 1/2 tsp sea salt
  • 1 cup (3 1/2 oz) raw cacao powder
  • 1/4 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup maple syrup (3oz)
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract (optional)

Instructions

  1. Place whole hazelnuts into food processor and pulse till in small flour like pieces. Next add in coconut flakes, salt, spices, and cocoa. Pulse together. Then add in vanilla, maple and coconut oil. Pulse till combined. Batter should be moist and come together easily. Taste to make sure it has enough spice and/or sweetness for your liking.
  2. *you can soak and dry the hazelnuts, but not necessary
  3. Now to mold the cookie biscotti – dump batter onto a large cutting board and using your hands mold into a log shape or any shape you like. There is no magic shape or size for the cookie biscotti, mold till you are satisfied. Then slice into pieces.
