- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: depends on size scooper
Ingredients
- 3 whole eggs
- half of a plantain, 100g after being peeled
- few drops of stevia for sweetness (optional)
Instructions
- Preheat skillet over medium heat.
- Peel plantain.
- Chop plantain and toss into blender.
- Add in eggs into blender.
- Blend ingredients until smooth.
- Spoon some batter into a small circle in the nonstick pan.
- Give it a few minutes to cook on one side.
- Then flip and allow pancakes to finish cooking on the other side.
- Until you’ve achieved a slight golden-brown color.
- Continue this until all the pancake batter is cooked.
- Plate and enjoy with some butter and/or maple syrup.

Is there a way to make these egg free? Would an egg substitute like Follow Your Heart Vegan Eggs work?
Amanda, not sure about that egg substitute. We never used it before so unsure of what would happen, sorry. We did link to our vegan version of a pancake.
These look SO GREAT! I can’t wait to make these. Would it matter if I used recipe, yellow plantains versus green plantains? Do you think one is needed over the other? Thanks! 🙂
We feel any ripeness of plantains would work in these. Just with the yellow more ripe plantain they might be more sweeter and maybe a little softer in texture.
I wasn’t sure what to expect when I tried these, and I couldn’t believe how good and pancake-y they really were! I think I just found my new favorite breakfast.

typically the green with a little yellow works best. A more ripe (yellow) plantain will provide a more moist texture
