Mint chip coconut protein cookie bites. Gluten-free. Paleo. Vegan.

The Best gluten-free paleo vegan mint chip coconut macaroons EVER! The delicate, sweet flavor of coconut really shines through in these delicious, moist, and chewy cookies with nice balance of mint and chocolate. No food coloring. We used chlorophyll to make them green!


  • 1/2 cup maple syrup (6 oz)
  • 1 1/2 tablespoons coconut oil
  • 2 tablespoons coconut butter
  • 1 teaspoon peppermint extract or a few drops of peppermint essential oil (to taste)
  • 8 drop of chlorophyll
  • 1 tablespoon cacao nibs
  • 4 tablespoons protein power
  • 2 heaping cups fine coconut flakes


  1. Place coconut flakes and protein powder into a bowl. Mix together.
  2. Stir in peppermint and chlorophyll .
  3. Then stir in coconut butter, oil and maple syrup.
  4. End with cacao nibs.
  5. Scoop onto cookie tray.
  6. Bake 300 for 15 – 20 minutes.
  7. Or dehydrate them 115 for a few hours to keep them raw.
