Never thought this would happen but yesterday as Gary was heading out for work our garage door wouldn’t open. Both of our cars were parked inside. He was able to take Michelle’s car into work. Luckily we didn’t have any urgent plans that morning. We are renting the home we are in and let the landlord know about our issue. We were able to get an electrician to come out later that morning to fix it. Yay. Now we have a fully working garage. Something I won’t take for granted again.

Seems so silly but when you can’t access your car it kinda freaks you out. It’s funny how you can take the little things in life for granted like garage doors working so you can get to your car. Who would have thought you wouldn’t be able to leave your house due to garage doors not opening? Has this happened to you before?

In our home we like to be preventive about things when we can but find it difficult to do with certain things like garage doors.

Today’s recipe has nothing to do with garage doors. It has everything to do with our obsession with waffles!

Few notes about the ingredients.

You can use plantain flour or another flour for the plantains if you can’t get access to real plantains. One note about plantain flour – it does provide a little bit more dense and chewy texture and it works best with eggs.

If you want to follow the protein waffle you can use any protein powder of your liking. Make sure it is one you like because you will taste it.  You could also try to use gelatin (green bottle) if you like.

If you want your waffles sweet make sure to use more ripe plantains (which will also make the waffles softer in texture) and add in a few drops of stevia or 1 tablespoon sweetness of choice.

We sometimes like to add in coconut flour to provide a softer texture. It is optional.

The chocolate waffles are more “milk” chocolate like not a rich chocolate waffle.

We don’t put sugar in our waffles therefore the texture is not crispy as traditional waffles.

Yay! Yay! Yay! Which waffle maker do you use (brand) I’m looking to invest in one and want one that stands up to a lot of use…and I KNOW your waffle maker gets a lot of use (wink wink)

I just whipped up a batch of the chocolate ones and they were worse than cocoa flavored cardboard. LOL I wonder what went wrong. I’ve been doing GF/Paleo for 6 years now, so the ingredients are nothing new. Any ideas?

Have you made our plantain waffles before? We don’t add sweetness and we use raw cacao which is bitter, so not sure what you used.

I just tried these! I did a a typical “this looks good, what do I have” recipe modification so mine included duck eggs (so pretty large) and a half scoop of chocolate protein powder. Plenty sweet enough and filling! Thank you for the recipe. 🙂

Awesome glad you liked them with your modifications 😉

Son wanted waffles. For some reason I googled plantain waffles and your website came up.

These turned out so well.

Once again, thank you!

Whenever I make plantain waffles, the first batch is alright and the second sticks to both sides of the waffle maker and is torn apart. I tried oiling and not oiling – same thing. I tried it in two waffle makers. Any idea what’s going on?

purelytwins November 8, 2018 - 8:51 pm

Are you adding OIL ( a fat) to the batter or just to the waffle maker? We found that we have to add in coconut oil to our waffle batters to prevent any sticking.

Does this recipe use ripe plantains or green ones? Thank you!

purelytwins May 15, 2019 - 7:56 pm

You can use both but it works best with green/yellow ones

What stage of ripeness are your plantains? green? barely yellow? yellow with some black spots? mostly black?
