If you haven’t noticed already from our snap chats and weekly sparks recaps we are obsessed with our waffle maker. We seriously use it every day after our Vitamix and coffee maker.

One day we got to chatting about making another waffle stick recipe. This recipe idea popped up in our heads. We enjoy a good cinnamon sugar baked good from time to time so we decided that’s what we were going to make. Plus we think waffle sticks are just too cute.

Few notes about the ingredients.

We used semi ripe plantains to help make the waffle base a little sweeter on its own.

We used pea protein in these waffles to add some more protein punch, but you can use any flour if you aren’t a fan of protein powders.

Healthy Gluten-free Cinnamon Sugar Protein Waffle Sticks - Single serving waffles which taste like a fresh, hot churro minus the nasties! Grain-free, dairy-free packed with protein. A must make recipe.
The texture was soft and light for the waffles with a slight chew. They are more soft not crispy waffles. But we are okay with that.

We also wanted to serve these waffle sticks with a creamy topping. So, coconut butter came to mind. As we started to play around with the creamy topping idea we decided to add in some yogurt to make it rich and creamy.

Plus, it’s a nice way to get a little extra healthy fats and probiotics in us. We used coconut yogurt mixed with coconut butter to create our frosting. You can replace with any yogurt you like.

For the sugar mix we did a mix of raw cane sugar and xylitol. We like to mix up our sugars. We know sugar is sugar but we like to get variety. Plus both our skin does great with xylitol. Of course you can use whatever makes you feel your best and happy. There are no rules.

Cinnamon sugar protein waffle sticks with yogurt frosting

Single serving cinnamon sugar protein waffle sticks with a dairy-free coconut yogurt frosting as the dip. This recipe is made from just 8 ingredients including plantains! NO flour making it gluten-free and grain-free recipe.

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Total Time: 10 minutes

Ingredients

Scale

Waffles

  • 75 grams plantains (weighed after peeling)
  • 2 eggs
  • 1/2 tablespoon coconut oil
  • 3 tablespoons protein powder
  • 1/4 teaspoon cinnamon

Sugar coating

  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon

Frosting

  • 1 tablespoon coconut butter
  • 2 tablespoons coconut yogurt

Instructions

  1. Heat waffle maker.
  2. Blend waffle ingredients in blender until smooth.
  3. Pour batter into waffle maker and let cook.

Place all ingredients for sugar coating in a small bowl and toss together.

Place frosting ingredients into a small bowl and mix together.

  1. When waffles are done let slightly cool.
  2. Cut into strips.
  3. Lightly coat waffle sticks with coconut oil.
  4. Toss waffle sticks in cinnamon sugar bowl.
  5. Mix around until all pieces are covered.
  6. Enjoy with the yogurt frosting.

Oh my goodness, these protein waffle sticks looks INCREDIBLE! The sugar looks so sweet–I’ll probably replace the sugar with Stevia and cinnamon! Hope it tastes just as good and will let you know how to turns out 🙂

You can use any other flour of choice or nut meal like almond to replace the protein powder in the waffle
