Yesterday was a great day. Two things happened. One we met with an accountant. She was nice!! Our goal this year is to start expanding the Purely Twins team. Second thing that happened was meeting one of our new SOSL sisters!! Crazy how the world works. Things happen for a reason. We chatted with her for an hour at the park. It was so good to talk to her and get to know her more so now we can really help guide her. We have been filming some new videos sharing new tools and stories that have helped us form a positive mindset and end our food and body image struggle. #loveourjob
One thing that helped us with loving food again (besides removing labels), which therefore allowed us to enjoy life again, was eating dessert. This is why you see so many dessert like recipes here. They are part of our lives and always be will be. Once we accepted that and found a way to make it work we created food freedom in our lives. SOSL sisters you will learn why and how we do this.

Quick and healthy homemade recipe for cookie dough cookie sandwiches. A dessert recipe to enjoy this summer. It’s gluten-free, grain-free, dairy-free and egg-free.
- Prep Time: 5 minutes
- Cook Time: 12 minutes
- Total Time: 17 minutes
Ingredients
Chocolate cookies
- 1/2 cup plantain flour (or any flour) or 6 oz plantain (after being peeled)
- 1/4 cup cocao powder
- 1/4 teaspoon baking soda
- 3 tablespoons sugar
- 2 tablespoons coconut oil
- 6 tablespoons water
Cookie dough filling
Instructions
- Pre-heat oven to 350 degrees.
- Add cookie ingredients into a bowl.
- Stir until batter is combined and smooth.
- Spread batter into 8×8 square pan
- Bakes 12-14 minutes.
Make cookie dough filling
Slice cookie in half.
- Spread about 1 cup or so of the cookie dough filling on one side.
- Top the other half of the cookie.
- Cut into 4 slices.

- Serving Size: makes 4 cookie sandwiches

I don’t see chocolate chips listed in the recipe for the cookies; however, your instructions say to not add them at the beginning…

well, coconut flour would provide a very different cookie as it soaks up a lot of liquid, so maybe try hemp protein first and see how it does.
Can Stevia be used in place of the sugar just in a smaller amount?
