We think Spring is here. It is going to be in the 70’s here the next few days… hopefully that warmer weather stays. We are slowly starting to put away our jackets and long pants and saying hello to our shorts and flip flops. We love this time of year. We love when a new season comes as it reminds us of a fresh start.  Madison and Jax are so ready to play outside all day long. And we are looking forward to our daily walks again, which we went on our first one yesterday! It has been 3 months since we’ve walked and it felt amazing. We love walking and are excited to hear that our new home has lots of places for walks and hikes.

Creamy grit casserole with bacon and brussel sprouts

Creamy goat cheese grit casserole with brussel sprouts and bacon is a comforting dish for any occasion. Gluten-free dinner made easy. Made with non-GMO corn.

  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
  • Total Time: 50 minutes
  • Yield: 9 quart 1x

Ingredients

Scale
  • 1 cup grits
  • 3 cups water
  • 1 1/2 teaspoons sea salt
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon thyme
  • 4 oz goat cheese
  • 2 eggs
  • 2 bacon pieces
  • 1 cup shredded brussel sprouts

Instructions

  1. Cook bacon if not already cooked.
  2. When bacon is done, using the same pan, cook shredded brussel sprouts.
  3. Heat 3 cups of water to a boil and add in the grits.
  4. Let simmer on low for about 12 minutes.
  5. Stir in sea salt, garlic powder, thyme.
  6. Next add in goat cheese, eggs, brussel sprouts and chopped bacon.
  7. Continue to stir.
  8. Pour grit mixture into baking dish.
  9. Bake in 350 degree oven for about 40-45 minutes.
  10. Serve warm.

I’ve never really had grits as a kid–in an Asian family, we don’t have it often! However, once in a while we do love some barbecue. If I ever have a family BBQ I’ll definitely try this out to share with them!
