Baked mini protein powdered sugar donut holes

Mini powdered sugar donuts holes that taste almost like the classic powdered sugar donuts with a healthy twist. They’re baked, not fried! Super delicious. Kids LOVE them and easy enough to weekday breakfast. Baked mini donut holes that are gluten-free, grain-free, dairy-free, paleo friendly and low in sugar.

Ingredients

  • 2/3 cup plantain flour (85g)
  • 1/2 cup arrowroot starch (60g)
  • 1/4 cup of sugar (coconut sugar, erythritol, or regular sugar)
  • 1 egg
  • 2 teaspoons baking powder
  • 3 tablespoons flax meal
  • 3 tablespoons coconut oil, liquid
  • 1/2 cup of full fat coconut milk (we use canned)

protein powdered sugar coating

  • 3 tablespoons protein powder of choice (we used Perfect Fit)
  • 12 tablespoons arrowroot starch

Instructions

  1. Preheat oven 350 degrees.
  2. Place all dry ingredients into a large bowl.
  3. Whisk.
  4. Next add in egg, coconut oil and milk.
  5. Stir until combined.
  6. Lightly grease a mini muffin pan with coconut oil.
  7. Spoon donut batter into mini muffin pan.
  8. Makes 20 mini donut holes (depending on scoop).
  9. Bake donut holes for 13-15 minutes.
  10. As donut holes are baking make protein powdered sugar coating.
  11. In a small bowl place protein powder and arrowroot starch and stir.
  12. Once donut holes are done baking pop out of muffin pan and start to coat them.
  13. Lightly coat each mini donut hole with some coconut oil and coat with powdered sugar mixture.
  14. Complete until all donuts are covered.
  15. You may have to double the sugar mixture if needed.
