We had some computer – internet issues yesterday. If you follow us on snapchat (loriandmichelle) we vented a little! But we didn’t let that stop us from being productive. We picked up Lori’s house, we threw things away we no longer use, we cleaned out iphoto on the computer and backed things up!! Which is so important to do.

A few years ago we had a major fail – we LOST (well we thought we did) a lot of valuable information. Something happened to one of our backups. We were devastated, frustrated and pretty much having a melt down. We searched all over the city for someone to help us. We found a place – a hole in the wall place. The guys were nice and probably thought we were nuts. Anyways, a few days of back and forth with them they pretty much told us after looking it over they couldn’t help us.

Once we gathered ourselves we found another computer place that said they could help us for a few thousands dollars!!

We went with it. And it worked. Lesson learned. Now we have about 6 backups!

We used goat cheese as the cheese because our bodies can tolerate that better than cow based cheese. Use whatever cheese your body likes.

If you don’t like sweet potatoes you can use potatoes or plantains as the crust.


Sweet potato crusted veggie quiche

Very yummy quick and easy family dinner. Sweet potato crusted veggie quiche that is made from just a few ingredients. Simple and satisfying dinner or lunch. Can freeze quiche ahead for easy lunches.

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: one 9inch pie 1x


  • 1/2 sweet potato, sliced thin (this is your crust)
  • coconut oil to oil pan
  • 1 cup of chopped mushrooms
  • 1 leek, chopped
  • 46 asparagus spears, steamed and chopped
  • 4oz of goat cheese (or cheese of choice)
  • sea salt and black pepper to taste
  • 5 eggs


  1. Preheat oven to 350 degrees.
  2. Grease a pie pan with coconut oil.
  3. Slice sweet potato and place slices on bottom of pan and sides. This is your crust.
  4. In a large bowl crack your eggs and beat.
  5. Next add in chopped veggies, sea salt and black pepper. Stir.
  6. Next add in goat cheese or cheese of choice.
  7. Stir and pour mixture into pie shell over the sweet potato slices.
  8. Bake for 30-40 minutes.
  9. Enjoy warm.
