A sinfully delicious chocolate dessert. It’s a light recipe but don’t be fooled: it bursts with flavor. This recipe comes together in just a few minutes. No baking required. The hardest part is waiting for it to set in the refrigerator.  A dense chocolate crust topped off with a light, rich, smooth and airy chocolate mousse and a creamy coconut whip cream top!

Not going to lie–we had this for breakfast yesterday. Anyone else love chocolate for breakfast? Totally acceptable in our house.

We both weren’t feeling the best so our appetite has been a bit off. Nothing chocolate can’t fix. It was the only thing that sounded good too and our stomachs were happy with it!

Today we are feeling better so back to our usual breakfast but these cute little mousse cakes will definitely be consumed for dessert. We are so excited to share this new dessert with you. Triple-Chocolate Mousse Cake! With three layers of goodness, these cakes are as pleasing to the eye as they are to the sweet tooth!

The chocolate cake is inspired by our raw snow cake. You can use any mix of nuts or seeds for the sunflower and cashews, just make sure it is ground into flour.

Raw chocolate mousse mini cakes

A healthy light chocolate mousse dessert recipe that is secretly good for you. Mini cocoa cakes for Valentines. This recipe is easy to make and delicious. It is gluten-free, grain-free, egg-free, and dairy-free. A chocolate crust topped off with a light, rich, smooth and airy chocolate coconut center and a coconut mousse top!

  • Prep Time: 10 minutes
  • Total Time: 10 minutes
  • Yield: makes 12 mini cakes or one 8 in circle pan 1x

Ingredients

Scale

Bottom cake layer

  • 1/2 raw cacao powder
  • 2/3 cup sunflower seed flour
  • 1/2 cup cashew seed flour
  • 2 tablespoons coconut sugar
  • 2 tablespoons coconut oil
  • 1 tablespoon water

Middle chocolate mousse layer

  • 1 cream part of coconut milk *place a can of coconut milk in fridge overnight. Flip it over the next day and pour out the liquid and scoop out the solid.
  • 1/4 cup raw cacao powder
  • 2 tablespoons maple syrup

Whip cream

  • 1 cream part of coconut milk *place a can of coconut milk in fridge overnight. Flip it over the next day and pour out the liquid and scoop out the solid.

Instructions

  1. Place the ingredients for the bottom layer into food processor. Pulse together. Once batter comes together scoop and press down into pan.
  2. Set aside.
  3. Make chocolate mousse by blending coconut cream with cocoa powder and maple .
  4. Whip until mixed together.
  5. Scoop on top of bottom cake layer.
  6. Use a spoon to help spread it around.
  7. Place in refrigerator to set.
  8. Next blend up coconut cream to make whip cream.
  9. Spoon it on top of chocolate layer.
  10. Place it the refrigerator to see for a few hours or overnight.

Hi there! Thoughts on substitutes for the cashew and sunflower seed flours. We do very little nuts. What about tigernut and chia meal? Same quantities????

You could try to use 3/4 cup tigernut and 1/3 chia seed flour as chia seeds have a very strong flavor.
