We enjoyed bread growing up. We weren’t huge bread people but we did enjoy it. One of our favorite breads was sourdough, especially from Carrabas restaurant. Bread and olive oil and we were happy little campers.

Now we enjoy all types of bread including raw breads  and plantain bread. 

We received request for more savory recipes, and this past week we were browsing pinterest and saw dinner rolls everywhere. Which made sense as dinner rolls are a staple of family dinner celebrations like Christmas.

Some meals just need a good slice of bread to wipe all the yummy goodness, in our case tahini!

How to make garlic rolls that are gluten and grain free

We used arrowroot starch in this recipe but you can use tapioca. The starch provides a soft, tender chew.

In addition we did 1/2 tsp parsley and rosemary to be our herb flavorings to go with the garlic powder. You could simply use 1/2 tsp Italian seasoning.

We used one egg in this recipe and have not tested it with a flax gel to make it vegan.

For those that cannot get or have plantains you can try using cooked yucca root or parsnips.

Plantain chewy garlic dinner rolls. Gluten and grain free.

Easy healthy garlic rolls made from just 6 ingredients. No flour bread rolls. These dinner rolls are made from plantains. You will no longer need to buy store bough dinner rolls as these rolls are tasty and made in just 15 minutes.

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes

Ingredients

Scale
  • 7 oz (200 grams) plantain – about a heaping 1 cup sliced plantains
  • 10 tablespoons arrowroot
  • 2 teaspoon baking powder
  • 1 egg
  • 2 tablespoons coconut oil
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon parsley
  • 1/2 teaspoon rosemary
  • 1 tablespoon gelatin (red can)
  • Olive oil * for glaze

Instructions

  1. Pre heat oven to 350 degrees.
  2. Blend plantain, coconut oil, egg and spices in blender.
  3. Pour batter into bowl and hand stir in arrowroot one tablespoon at a time.
  4. Scoop dough onto baking sheet.
  5. Bake for 5 minutes.
  6. Remove from oven and spread a light layer of olive oil on top and sprinkle with more spices if desired.
  7. Place back in oven and bake for 10 more minutes.

Looks yum. But as a vegetarian the egg isn’t a problem but the gelatin is. Any replacements for the gelatin?

you can use a nut flour or any gluten-free flour or more arrowroot starch

I had problems with mine. After putting in the arrowroot flour it still came out very sticky. I ended up using double the amount! And it also took longer to bake, like 30 minutes. Is there something I did wrong?

Desiree, not sure why that happened to you. Sorry. One issue might have been the plantain you used was to ripe making it a softer batter.

I am amazed. I screwed up the recipe and it still came out great. (I misread and added an extra egg. Then added about 5-6 extra tbsp of starch to compensate. Then it still didn’t look thick enough to scoop into rolls so i poured it into a greased bread pan and baked it about 35 minutes.) A little too salty for me, but the texture and flavor were otherwise amazing. This is the first gluten free “bread” that I was actually happy to eat since going GF 4+ years ago. I’m so glad I found your blog and I can’t wait to try some of your other recipes now!

Could the arrowroot be replaced by another egg?

We don’t think that would work, you are adding in more liquid to replace flour. If you don’t want to use arrowroot start or any other starch, you could try another gluten-free or grain-free flour.

…what happened to the recipes? Did they go subscription only? I’ve clicked on a half dozen recipe posts and none of them have either the written recipes or the videos, just the vague descriptions that lead up to the recipes.
