Chocolate peppermint candy cane cookies (gluten, grain, dairy and egg free)

Healthy chocolate peppermint cookies that are paleo and vegan friendly. These cookies are addicting and the perfect partner to a peppermint mocha or peppermint hot chocolate. Made from just a few ingredients including candy canes.

Ingredients

  • 1/2 cup hazelnut flour (2oz)
  • 1/2 cup tigernut flour (2 oz)
  • 1/4 cup raw cacao powder (1 oz)
  • 3 tablespoons monk fruit (or any sugar)
  • 1/4 cup coconut oil. semi solid (2 oz)
  • 1 flax gel (1 tbsp flax meal mixed with 6 tbsp water) or 1 egg
  • 3 crushed candy canes
  • 8 drops of peppermint essential oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Take 1 tablespoon flax meal with 3 tablespoons water to make a flax gel, let sit for 10 minutes.
  3. Place all your dry ingredients into a bowl and mix together.
  4. *we make our own hazelnut flour by grinding whole hazelnuts into flour
  5. Next add in the coconut oil, flax gel (or egg) and peppermint.
  6. Mix together.
  7. Stir in crushed candy canes.
  8. Batter will be slightly thick.
  9. Scoop cookies onto cookie tray lined with parchment paper or silicone sheet.
  10. Press cookies down to flatten as this batter does not really spread.
  11. Flatten cookies to your desired thickness.
  12. Bake cookies for 12-15 minutes.
  13. Let the cookies cool on cookie tray for a few minutes before removing to cooling rack to continue cooling.
