We are down in Orlando visiting our older sister before we head home to spend the Thanksgiving holiday with the rest of our family. Madison is having a great time! She loves waving and smiling at everyone around her. Yesterday morning she got to see some animals at the Animal Kingdom lodge after we enjoyed a delicious breakfast there. She got to see some giraffes. She got so giggly when she saw them walking.

Before leaving town we made these cookies up and they were gone in just a few days. Promise they will become your new favorite.

We realized we didn’t have a chocolate peppermint cookie recipe. Gasp.

Madison even helped us in the kitchen with this recipe. She gets just as excited as we do when we are making something in the kitchen. Nothing beats homemade cookies.

This recipe satisfies our deepest chocolate peppermint obsessions. So, good!

Chocolate peppermint candy cane cookies (gluten, grain, dairy and egg free)

Healthy chocolate peppermint cookies that are paleo and vegan friendly. These cookies are addicting and the perfect partner to a peppermint mocha or peppermint hot chocolate. Made from just a few ingredients including candy canes.

  • Prep Time: 5 minutes
  • Cook Time: 12 minutes
  • Total Time: 17 minutes
  • Yield: 14 cookies 1x

Ingredients

  • 1/2 cup hazelnut flour (2oz)
  • 1/2 cup tigernut flour (2 oz) Get yours here
  • 1/4 cup raw cacao powder (1 oz)
  • 3 tablespoons monk fruit (or any sugar)
  • 1/4 cup coconut oil. semi solid (2 oz)
  • 1 flax gel (1 tbsp flax meal mixed with 6 tbsp water) or 1 egg
  • 3 crushed candy canes
  • 8 drops of peppermint essential oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Take 1 tablespoon flax meal with 3 tablespoons water to make a flax gel, let sit for 10 minutes.
  3. Place all your dry ingredients into a bowl and mix together.
  4. *we make our own hazelnut flour by grinding whole hazelnuts into flour
  5. Next add in the coconut oil, flax gel (or egg) and peppermint.
  6. Mix together.
  7. Stir in crushed candy canes.
  8. Batter will be slightly thick.
  9. Scoop cookies onto cookie tray lined with parchment paper or silicone sheet.
  10. Press cookies down to flatten as this batter does not really spread.
  11. Flatten cookies to your desired thickness.
  12. Bake cookies for 12-15 minutes.
  13. Let the cookies cool on cookie tray for a few minutes before removing to cooling rack to continue cooling.

For the sugar we used monk fruit to keep it low in sugar but you can use any sugar of your liking. We know we will get questions about using stevia for the sugar and we aren’t sure if using stevia would work in these mainly because it would alter the texture of these cookies.

You could also use almond meal instead of hazelnut meal and/or tigernut meal.

I’d love to get some tigernut flour, but it costs $22 Cdn shipping to Canada! for one bag. Oh well. May have to wait until someone around here distributes it. Otherwise the treats look fab!
