They are easy to make. The batter comes together in one bowl, by hand, in just minutes. The frosting makes this recipe. Fresh coconut butter blended with cranberries. No white chocolate necessary here. Pour yourself a cup of coffee and enjoy some paleo and vegan friendly cranberry bliss bars.
We love Starbucks. Mainly for the COFFEE! But back in the day Michelle used to work there and some of her favorite pastry items were the lemon pound cake, cinnamon coffee cake and cranberry bliss bars. Neither one of us are fans of white chocolate we prefer dark, raw chocolate, so our recipe for cranberry bliss bars does not have white chocolate. But we promise you won’t even miss it!

You can make these cranberry bliss bars year-round at home anytime you want them.
Cranberry Bliss Bars are really just blondies that are made with white chocolate, cranberries and then frosted with white chocolate-infused cream cheese frosting.
To keep the recipe a bit healthier we omitted the cream cheese and made our 3 ingredient cranberry butter for the frosting.
For the base of the cookie we made this cookie as it is a great base for this bar. It is blondie-like – slightly sweet, soft-ish but firm.
We used tigernut and coconut flour in our recipe because our tummies like them, and they are naturally grain and nut free which make our skin happy too. To keep the recipe low in sugar (we both do best when we limit our sugar intake) we used a mix of maple syrup and monk fruit. If you do not have monk fruit you can use any sugar substitute you like.

We were so excited to create our version of a cranberry bliss bar. It makes us giddy with excitement to be sharing our recipe with you.
These bars are as fun to make as they are to eat. They are so easy and came together in about 20 minutes. A little too easy and taste like the real thing.
We followed the lead of all the other copycat recipes out there and cut the bars into triangle shapes, which makes them really cute too!
We inhaled these; even Madison and Gary gobbled them up. We cannot wait to make them again.
Gluten, grain, egg and dairy free cranberry bliss bars made with coconut and tigernut flour
While the bars bake and are cooling, make the creamy dairy-free cranberry frosting.
The frosting is where the magic happens in our opinion.
Starbuck’s version adds an orange zest element to it, which we didn’t do. But if you like that flavor it would make for a nice flavor balance with the tartness from the cranberries and sweetness from the cookie base.
You need to make them because they are really, really good.

Cranberry bliss bar. Paleo. Vegan.
Cranberry bliss bar recipe that is very reminiscent of Starbuck’s Cranberry Bliss Bars. Soft, delicious cookie base with a cranberry coconut butter frosting. This recipe is gluten, grain, dairy, egg, and nut free. A healthier version of the holiday favorite.
- Prep Time: 5 minutes
- Cook Time: 20 minutes
- Total Time: 25 minutes
- Yield: makes 16 slices 1x
- 2/3 cup coconut flour (2 3/4oz)
- 1/4 cup tigernut flour (1 oz) Get yours here
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 tablespoons maple syrup ( 1 1/2oz)
- 2 tablespoons monk fruit
- 1 teaspoon vanilla extract (optional)
- 2 whole eggs or 2 flax gels (3 tablespoons flax meal with 6 tablespoons water)
- 8 tbsp coconut oil, semi solid (4 oz)
- 2–4 tablespoons water
- Double the cranberry butter recipe
Make the cookies
- Pre-heat oven to 350 degrees.
- In a large bowl, place all your dry ingredients. Stir.
- Next add in coconut oil and eggs (or flax egg).
- Stir together.
- End with adding in your water. Add enough until the batter starts holding together. You want it to be on the thick side.
- Grease a 8×8 glass square pan.
- Spread dough.
- Bake for 16-20 minutes.
- Let cool a few minutes before removing from pan.
- When cooled spread the frosting on top.
- Slice and enjoy.
