We had a pretty normal day yesterday. We went grocery shopping for food for the week. Madison loves going to the grocery store which is awesome because I love going too! She looks at all the people and all the food with her big eyes trying to figure out what everything is. She is close to having 4 teeth. Her two upper teeth are coming through and it is hard to say if any more teeth will be popping up. I love seeing her smile and laugh now where I get to see more white. Yes I get excited over those things.
On our walk yesterday Madison was sitting in her stroller and getting a little fussy, so I gave her Jax’s leash to hold while we walked. She had the best time. She loved it. After awhile she kept dropping the leash, I would hold onto it, then she would cry for it back, hold onto it, drop it, cry… repeat. One of her favorite games is picking up and dropping things so I think that is what she was trying to do with the leash. It was the cutest thing to watch her “walk” Jax.

It’s absolutely an explosion of flavors in this french toast bake.
This recipe was inspired by our baked fig plantain bread pudding recipe.

Not your average french toast. You know we like to mix things up over here.
The filling is a mix of coconut milk, eggs and avocado.
Yep avocado – our secret ingredient.
Why did we use avocado?
We wanted to reduce the amount of sugar in the filling so we replaced the sugar with avocado. We added in a little stevia for a touch more sweetness.
It worked out great. Rich and satisfying. Full of healthy fats and protein.

A simple and deliciously healthy gluten-free grain-free low sugar breakfast. Baked nutella french toast. Great way to enjoy healthy fats, protein and chocolate for breakfast! Made with avocado instead of sugar.
- Prep Time: 5 minutes
- Cook Time: 35 minutes
- Total Time: 40 minutes
Ingredients
- 1 recipe of our protein nutella bread (need about 7–8 cups of cubed bread)
Filling
- 6 eggs
- 1 avocado
- 1 canned full fat coconut milk
- few drops of stevia
- 2 tablespoons cocoa powder
- 1 teaspoon cinnamon
Instructions
- First make one round of our protein nutella bread or use 7-8 cups of bread of choice.
- Preheat oven to 350 degrees.
- Cut bread into cubes and place into a large bowl.
- In another bowl blend eggs, coconut milk, avocado, cocoa powder, cinnamon and stevia.
- Mix well.
- Pour mixture over cubed bread.
- Toss until coated.
- Pour entire mixture into a 2 quart baking dish.
- Bake for 30-40 minutes or until firm.
- Slice and top with maple syrup and more hazelnuts if desired.
