Well, it looks like Madison is down to one a nap a day!!!

It feels like our schedule is changing all the time over here. We are trying to find a routine. It’s a work in progress. Tonight actually is a big night for Lori and Gary…day care orientation for the new parents!! Then tomorrow Madison gets to meet her teachers. Excuse us while we wipe the tears from our faces…she is growing up too fast.

Now, if you’ve been following us for awhile you know that we don’t eat much dairy.

Actually, we tend to go through periods when we enjoy it then don’t care for it.

When we do enjoy some dairy (mostly in the form of goat cheese) we make sure the recipe is worth it and it’s good quality dairy. Makes it that much more special, right?

Quick dinner mac-n-cheese recipe made from coconut milk and plantains

We wanted to make this more of a one pot dish so we threw in some shrimp from Sizzlefish and baked it!  Brilliant!

Sizzlefish’s frozen shrimp cooked up perfectly after we defrosted it. Firm, crisp texture when you first bite into the shrimp. So good.

Flavorful. Simple. Delicious. Pretty on the eyes.

We find this dish to be the perfect balance of flavor and not too much cheese. We don’t like our meals covered in lots of cheese. We like to taste all the ingredients.

It might look complicated but we promise you it is super easy to whip together.

Plantain shrimp mac-n-cheese dinner recipe (gluten and grain free)

Quick baked coconut milk shrimp mac-n-cheese recipe made with plantains. Gluten and grain free dinner recipe.

  • Prep Time: 25 minutes
  • Cook Time: 20 minutes
  • Total Time: 45 minutes

Ingredients

Scale
  • 1 large plantain (peeled,cubed, steamed)
  • about 1/3 cup shredded goat or sheep cheese (or any cheese of choice, preferably grass-fed or organic, could use vegan based cheese)
  • 1/2 cup coconut milk
  • 1/4 teaspoon salt
  • black pepper to taste
  • sprinkle parsley
  • 1/4 teaspoon paprika
  • 1012 shrimp

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel plantain.
  3. Chop into cubes and place in steamer. Steam for about 25 – 30 minutes. *You can do this ahead of time
  4. In a large bowl pour coconut milk and spices. Stir.
  5. Add in cheese and plantain cubes.
  6. Stir.
  7. Add in the shrimp and stir together.
  8. Pour into 6 in baking dish. Or 2-3 ramekins for individual servings.
  9. Bake for 20-25 minutes.
  10. Remove from oven and top with more cheese if desired.
