We can’t believe that school is back in session. Where did summer go? Madison is going to be starting part time day care starting in September for 2 days a week. I must say I am extremely nervous and excited for it. Do you have any advice for me with not crying when I drop her off for the first day knowing that she might cry too? Madison loves her mom which makes me so happy but I also want her to build more independence and social skills by interacting with others. Especially other babies.  I know that is going to be a hard week on us both.

As a busy mom I love finding quick recipes to enjoy. We have another quick and healthy recipe for using Sizzlefish . We used our favorite wrap as the base in this recipe and in that recipe video we filled the wrap with similar ingredients.  We loved it so much that we wanted to make it again and share a more formal recipe for a filling.

The flavor and texture of the coho salmon from Sizzlefish was perfect.

Defrosting frozen salmon for us can be tricky. Sometimes it defrosts great and other times when we cook it up it has no flavor and is so dry. Not this salmon. It was moist and full of flavor.

Paleo dairy-free coleslaw recipe

We love making up quick coleslaws! We love cabbage. We don’t like heavy mayo based coleslaws.

The mixture of coconut milk and tahini make for the perfect dairy-free creamy light coleslaw.

We used coho salmon in this wrap because it is one of our favorites. We love eating different types of salmon, although coho and sockeye seem to be the most available.

This recipe would work with any fish or meat of your liking. Or if you don’t eat meat use any veggie you like.

Salmon coleslaw wrap (gluten-free, dairy-free, paleo)

A quick and healthy lunch idea – salmon coleslaw wrap. Real food recipe that is gluten, grain, dairy and egg free. Don’t like salmon sub in any protein you like.

  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
  • Total Time: 25 minutes
  • Yield: Serves 2

Ingredients

Scale
  • 1 recipe of plantain chia seed wrap
  • 2 fillets of salmon
  • 1/2 bag of coleslaw (shredded cabbage)
  • 3 tablespoons of coconut milk
  • 2 tablespoons of tahini
  • sprinkle of caraway seeds
  • salt and pepper to taste

Instructions

  1. Make the plantain chia seed wrap
  2. Bake salmon in oven at 350 degrees for about 20-25 minutes.
  3. Place shredded cabbage in a bowl and toss with the remaining ingredients.
  4. When wrap is done baking let it cool.
  5. When salmon is done baking crumble into coleslaw mix.
  6. Fill wraps with salmon coleslaw.
  7. Carefully roll up and enjoy.

I’m making this for lunch this week. I would love to be able to print recipes without a picture. It uses a lot of ink and always goes onto two pages. 🙂
