Easy healthy real food fish and chips dinner that serves two. Quick paleo dinner made with coconut flakes, coconut oil and plantains.

Ingredients

  • 1 plantain
  • 2 fillets of whitefish
  • 23 tablespoons coconut oil

Spice Mix:

  • 1/4 cup coconut flakes
  • 3 tablespoons cup tigernut flour (or any flour like almond flour)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon garlic powder
  • black pepper to taste

Instructions

  1. Pre heat oven to 350 degrees. Peel and slice plantain into strips.
  2. Place plantain strips onto a pan and drizzle with coconut oil.
  3. Bake for 20-25 minutes. *lightly salt these if desired
  4. Next slice fish into strips.
  5. Make spice blend by tossing the ingredients together in a bowl.
  6. Pour 2 tablespoons of coconut oil onto a plate.
  7. On another plate dump the spice blend.
  8. Carefully roll the fish slices into the coconut oil.
  9. Then carefully toss in the spice mix.
  10. Place fish strips on a baking dish.
  11. Bake for 15 minutes.
  12. Then flip fish sticks and bake for another 5 minutes.

Option – end with broiling for 2-3 minutes

  1. Serve along side your favorite veggie side dish if desired.
