We are excited to share this recipe with you today. We shared it last week on Instagram and Facebook and everyone loved it. Now we have the official recipe and recipe video for you so you can make them too. You will be blown away with just how easy they are to make.

Since there are two of us it’s nice when we are able to create a recipe that serves just 2.

Actually, a lot of our recipes can serve 2 so they all work out nicely. Even though we love leftovers… it’s nice to have something new to treat ourselves with. And not only do we have our 3 ingredient donut recipe for you but we have a second version –> our 4 ingredient plantain flour donut recipe. We know you might not always be able to get fresh plantains so we created a second recipe using plantain flour and protein powder for a protein packed donut!

How to make baked donuts that serves two with a simple protein coconut oil frosting with no sugar

We love that we created an amazing recipe using just plantains, tigernut flour and coconut oil. And no, we don’t count baking powder as an “ingredient.”

We think this is going to be our go-to donut recipe from now on.

This recipe is based off our first time making egg-free donuts with plantains.

We wanted to remake that recipe to be starch free.

We don’t have anything against using starch but we like to omit them when we can. For us personally, we notice that if we have too much starch our tummies and skin do not like it. This is something we have learned over the past few months. Luckily, we’ve discovered tigernut flour because it works perfectly in our recipes!

If you still want to use plantains but can’t get fresh plantains you can use plantain flour in your flour blend. Note: using plantain flour does provide a different texture compared to using a whole plantain. We think that using whole plantains provides more liquid in the batter and we are having a hard time figuring out the perfect wet ratio using plantain flour. Overall, we are pleased with how the plantain flour recipe turned out as well.

3 ingredient baked donut for two (grain-free, egg-free, sugar-free)

The easiest and healthiest donut recipe that’s made from just 3 simple ingredients. Baked not fried. Made from real food. Plantains, coconut oil and tigernut flour. No sugar added. Can be made with plantain flour. Topped with a creamy coconut oil protein frosting. Our go-to donuts to make!

  • Prep Time: 5 minutes
  • Cook Time: 13 minutes
  • Total Time: 18 minutes
  • Yield: makes 2 large donuts when using norpro pan 1x

Ingredients

3 Ingredient Baked Donuts:

  • 6 oz (170 grams) peeled plantain, yellow-green one
  • 5 tablespoons tigernut flour (25g)
  • 1 teaspoon baking powder
  • 2 tablespoons coconut oil, semi solid

Protein frosting:

  • 34 tablespoons protein powder (we used pea protein)
  • 1 tablespoon coconut oil
  • a few drops of stevia ** optional
  • Add water 1 tablespoon at time until you get the desired consistency.
  • Add maple syrup or drops of stevia to taste if you desire a sweeter frosting.

4 ingredient Protein plantain flour donuts

  • 1/4 cup plantain flour (1oz)
  • 4 tablespoons tigernutflour (3/4oz or 24g)
  • 4 tablespoons protein powder (1oz)
  • 1 teaspoon baking powder
  • 2 tablespoons coconut oil, semi sold
  • 6 tablespoons water

Instructions

  1. Peel a large plantain and should weigh around 6 oz. Roughly chop plantain and place in blender with coconut oil. Puree until smooth.
  2. Next add in remaining ingredients.
  3. Continue to blend until smooth.
  4. Lightly grease donut pan with coconut oil. Fill donut pan. Makes 2 large donuts.
  5. Bake at 350 degree for about 13 minutes.
  6. For the protein frosting:
  7. Place all ingredients in a bowl and start to mix. Will need to add in some water until desired frosting consistency is achieved. Spread onto donuts.

To make 4 ingredient plantain flour protein donuts:

  1. Place plantain flour, tigernut flour, protein powder and baking powder mixed together. Next, add in coconut oil and water. Stir until smooth. Batter will be a little thick but easy to work with.
  2. Continue to blend until smooth.
  3. Lightly grease donut pan with coconut oil. Fill donut pan. Makes 2 large donuts.
  4. Bake at 350 degree for about 13 minutes.
  5. Top with same protein frosting.

Notes

We recommend using the Norpro donut pan.

Nutrition

You can use your favorite protein powder of choice in these donuts.

To replace the tigernut flour you could use chestnut flour or try almond meal.

The only problem I ever have when i come here is being really hungry. I would have said you can’t make a donut with just 3 ingredients, but WOW!!! I’m adding this one to my ever-growing recipe book of nutritious delights, many thanks to you girls and a few of my other favorite bloggers. I didn’t even think of buying my flour from Amazon, so I’ve had to forego a few recipes when our local grocery store didn’t have the one brand of flour I could use. Thanks again lovelies!

You two always introduce me to new and interesting ingredients– I hadn’t heard of tigernuts before, but now they are on my radar and I am thinking about trying it out. Never have baked with plantains, either, just regular bananas– are you using plantains for something less sweet?

You can use any other oil you like may that be olive oil or grapeseed oil.

I am just in awe of how wonderful these donuts are! Honestly, I did not have very high hopes for these. (Four ingredients and egg-free? Yeah right!) However, they are really good. They’re somehow both dense and fluffy; they’re springy and perfectly cooked through (though I did have to cook them about twice as long; maybe it’s my old oven), which are both very challenging to get when grain-free and egg-free! Another thing I love about these is that they’re sugar-free. I can top them with a bit of coconut butter and cinnamon and it feels like an indulgent dessert. After this one, I’m look forward to trying more of your recipes! Thank you!

I would love to try these- they look very good and easy to make. But, have you had any skin breakouts from eating coconut oil? It seems like whenever I try it, I have a significant problem. It’s a bummer because it is good for a lot of recipes. Thanks.

No issues with coconut oil for us. Sorry to hear your skin doesn’t do well with it. Certain recipes you can replace the coconut oil with other cooking oils. Mainly the raw recipes you can’t as the coconut oil gives the structure.
