It has been awhile since we have enjoyed some pancakes, which is crazy to think that, because we love them. Pancakes are one of our favorites!

We are still enjoying pumpkin over here despite that the holiday season is over. Are you still enjoying it too? Or is it just us?

German chocolate was one of our grandpa’s favorites. We remember as kids him buying german chocolate cakes all the time. He would always offer us some, but we would say no. Because at the time we did not like coconut!!!! Anything coconut made us run away haha, we know crazy.

Oh boy how things  have changed as all we want is something with coconut.

We wish we could enjoy some german chocolate pancakes with our grandpa today, but we know he would approve of this recipe.

He would approve anytime chocolate was involved. He loved chocolate just as much as we do.

He would call it his medicine. #wiseman

Our grandpa also loved pumpkin. So we fused those two flavors together.

How to make flourless chocolate pancakes with pumpkin pecan filling

We love chocolate and pumpkin together.  Light, fluffy pancakes with a rich creamy pumpkin filling with pecans make these pancakes perfect!

These pumpkin german chocolate pancakes are made with some of our favorite ingredients.

Pretty much coconut, pumpkin, cocoa and plantains!

flourless pumpkin german chocolate pancakes (grain-free, gluten-free, paleo)

A fun and healthy way to enjoy the classic German chocolate treat with a pumpkin twist.

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes

Ingredients

Scale

Cocoa pancakes

Pumpkin filling

  • 1/2 cup pumpkin
  • 1/2 cup coconut butter
  • 1/3 cup coconut flakes
  • 1/3 cup pecan pieces
  • * can add in some stevia or maple syrup to filling if want some sweetness (optional)

Instructions

  1. Make cocoa pancakes.
  2. Follow directions here.
  3. Once pancakes are done. Set aside.
  4. Make pumpkin filling.
  5. In a bowl combine coconut butter and pumpkin. Stir together.
  6. Next add in coconut flakes and pecan pieces.
  7. Continue to stir.
  8. Start building pancake stacks.
  9. Place one pancake down and top with filling.
  10. Repeat until no more filling.

Nutrition

  • Serving Size: serves 2 - 3

Substitutions:

Don’t have plantains you can use unripe – green bananas.

Replace cocoa powder with carob powder.

Use any nuts over the pecans.

Can use a nut butter instead of coconut butter just note it will change the flavor.

Lovely!! I’m still eating pumpkin too, I have a bunch of puree left in my freezer from the fall thats taking up space :0

OMG these need to be on the agenda for this weekend!! I love it when you make recipes “flourless” since I don’t digest any sort of flour very well. I am much more likely to make a recipe when it’s already flourless. Thank you girls!!! 🙂
