do you think protein powder would work in place of the tigernut? or would I need to add a starch of some sort as well?
thanks so much!!

purelytwins March 6, 2015 - 9:00 am

you could try just protein powder, it might turn out. but do a little starch might be a good idea too. maybe do a mx of the two

These are so cute! I’ve been playing around with tigernut flour in some other recipes and I find that the end product is sometimes grainy/gritty/sandy. Do these have a gritty texture? Thanks!

purelytwins June 2, 2015 - 8:32 pm

When we have tigernut plain we find it gritty, but when we use it recipes we haven’t noticed it.

Can honey or srevia replace sugar?

purelytwins March 19, 2016 - 11:28 pm

You can use another sugar replacement. If you use honey you might not need the coconut milk

We would say about 3 – 5 days. For longer shelf life you could freeze them.

I would love to make these cookies for my daughter. Only problem is I live in South-Africa and shipping/ordering it only the Tigernut Flour will cost a lot and will take time to get here. What else can I use instead of Tigernut Flour?

purelytwins January 4, 2019 - 7:46 am

You can use any gluten-free flour for it

Vanessa April 13, 2021 - 6:14 pm

Thanks for sharing! Do they keep long?

purelytwins April 15, 2021 - 10:40 am

We would say about a week and longer if stored in freezer and pulled out when wanted to snack on.
