Good Morning luv!

Sleep is a big discussion over here now with a little one. Madison sleeps great at night, which is when we normally get our work done. Although last night we decided to switch things up. We stopped doing work at about 9:30pm. Michelle went to her place as I started some laundry and some other house work.

Our intention was to get to bed early so we could get up at 5 am (instead of working to 1 am then sleeping). Well…Β both of us did not get to go to sleep until 11pm. Yeah, so much for getting to bed early.

But we did get up early to get our workout in, shower and dress for the day all before 7am! That’s when I started to hear noises that Madison was getting up. Madison usually gets up at 7:30am so this was a little early, but dad loved it as he got to see her on his way out before work. Β Good thing Michelle arrived at my house to help get things done with this post.

We normally do our blog post the night before the post goes up. If we are really good we have it ready a few days ahead. Yeah but that doesn’t seem to happen much anymore. So this morning we have been working on it. Β This is one great thing about working from home: you can change things up!

Today we are sharing a recipe we created last week. After so much success with our sugar-free vanilla cake, sugar-free oreo cake

we knew we needed more flavors.

We loved this cake so much. All the flavors blended so nicely together. It was nice to enjoy a huge slice of cake without having a major sugar rush afterwards.

This cake might look hard to make with all the layers and frosting, but as you saw in the video it is really easy to make.

We love the look of neapolitan cakes. All the colors. All the different flavors happening.

We did not use any food coloring for the strawberry frosting, so it’s not as bright as some neapolitan cakes you have seen while playing on pinterest. Β Like with most of our recipes we rely on the food to bring the color. If you desire a more intense pink color free to add in some food coloring or even try a little beet juice.Β 

We alsoΒ changed up the vanilla cake a little. Instead of using our beloved coconut butter we used almond butter and added in baking powder. It turned out perfect!! It actually turned out to be a little bigger cake than we thought, so we had to trim off some of the top (which you see in the video) to make it flat and equal in size to the chocolate cake. We didn’t mind as we got to sample the vanilla cake crumbs while frosting the cake!

This recipe is great if you are like us and prefer to eat a low sugar diet but still have a “sweet” tooth.

Made from some of our favorite ingredients! We are still working on ideas to replace the plantains for those that can’t get it. We hope to have a good replacement soon. For now, we always recommend a green unripe banana.

Sugar-free Neapolitan Cake (gluten, grain and dairy-free)

A real food neapolitan cake made without sugar, grains, gluten and dairy. Chocolate and vanilla cakes made from plantains instead of flour. No added sugar layered cake. A perfect dessert to enjoy when you need a low sugar treat.

  • Prep Time: 18 minutes
  • Cook Time: 30 minutes
  • Total Time: 48 minutes
  • Yield: one 6inch layered cake 1x

Ingredients

Scale

chocolate cake

  • 8 oz green/yellow plantain (peeled) – about 2 plantains
  • 1/2 cup applesauce (4 oz)
  • 1/4 cup coconut oil, liquid (2 oz)
  • 2 tablespoons coconut butter (1 1/2oz)
  • 1/4 cup hemp protein (1 oz)
  • 2/3 cup cocoa powder (2 1/2oz)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

yellow cake

  • 7 oz plantain (peeled)
  • 3 eggs
  • 2 tablespoons coconut milk
  • 1/2 cup almond butter (4 1/2 oz)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon stevia
  • 1 teaspoon vanilla

Strawberry frosting

  • 1 1/2 cups cashews, soaked and rinsed
  • 1 cup strawberries, sliced in half (6 oz)
  • 1 cup coconut butter (8 1/2 oz)
  • 1/2 teaspoon stevia (or 1 tbsp maple syrup)
  • 1 teaspoon vanilla

Instructions

Make chocolate cake

  1. Preheat oven to 350 degrees.
  2. Place plantain, applesauce, coconut butter and coconut oil into your Vitamix blender.
  3. Blend.
  4. Next add in hemp protein, cocoa powder, baking powder, baking soda and sea salt.
  5. Blend. It will get very thick.
  6. You can stir in the dry ingredients into a bowl with the wet.
  7. Grease 6 inch circle pan.
  8. Pour batter into pan.
  9. Bake from about 25 -30 minutes.
  10. Let cake cool before removing from pan.

Make yellow cake layer

  1. Peel plantain.
  2. Place plantain, eggs and almond butter into your Vitamix blender.
  3. Blend.
  4. Next add in coconut milk, stevia, baking powder and vanilla.
  5. Blend.
  6. Grease 6 inch pan or cupcake pan.
  7. Pour batter into pan.
  8. Bake from 20-30 minutes depending on your oven and size pan.
  9. Let cake cool before removing from pan.

To make strawberry frosting

  1. Place soaked and rinsed cashews into blender with strawberries and coconut butter.
  2. Blend. It will get thick.
  3. Stop a few times to scrape down the sides.
  4. Add in stevia and vanilla.
  5. Blend until smooth.
  6. We find it easier to pour frosting into bowl before frosting cake.

To make layered cake

  1. Carefully trim the vanilla cake to match the size of the chocolate cake.
  2. Begin frosting the chocolate cake.
  3. Once you have the desired amount of frosting on place the vanilla cake on top.
  4. Carefully spread the frosting over the rest of the cake.
  5. Take your time with this as the frosting is thick.
  6. Slice and enjoy.
  7. This recipe will stay good in refrigerator for about 2-4 days.

Nutrition

  • Serving Size: makes about 6 - 8 slices

Substitutions:

For the plantains you can use a GREEN unripe banana.

For the protein powder we used hemp protein. You can use any protein powder just know it might change the flavor and texture.

For the coconut butter you can use anyΒ nut or seed butter.

You can use macadamia or almonds to replace the cashews in the frosting.

1/2 cup or 1/4 cup coconut oil? The recipe says 1/2 cup but also 2 oz.

Okay here’s the review: overall, delicious but the chocolate cake could use some sweetening agent, like a couple of medjool dates in the mix or some maple syrup. I didn’t have or want to buy hemp protein so I put in a scoop of Greek yogurt instead. Both cakes consistency is moist but not overly dense, pretty light for grain free! Vanilla cake is superb. The frosting flavor wasn’t strong enough so I’d try it again next time with strawberry extract. The cashews gave it an amazing frosting consistency but the coconut flavor detracted from the strawberry.

I’ve been having a hard time finding gluten free and sugar free desserts, and I can’t wait to try your vanilla cake. Do you know if it’s possible to add in flavored sugar free syrups (like DaVinci) to the mix to make it taste different? I am trying to have a variety of desserts that I can make, and I have a lot of syrups I’d like to try. I don’t know how I’d incorporate them into a recipe. Or would other flavored extracts work? Thanks for your response in advance… I would appreciate any kind of help since I am new to the GF and SF lifestyle! πŸ™‚

Not sure the syrups would be the best thing to use in this recipe. If you want to add more flavor use flavored extracts would be the best way to go. We have a lot of gluten free and sugar free recipes πŸ™‚

This turned out great! I used grapeseed spread because I never found coconut butter. I used vanilla protein powder. My frosting came out pretty thin. I may have added too many strawberries but it was soooooo good. I also made this as mini loaves instead of a layer cake. 20 minutes bake time was perfect then I put it all together. My white cake was very thick so I should have spread it better in the pan so it would come out a better shape. But the flavor of that cake was my favorite . I cut it down to make perfect rectangles and wow they look so pretty topped with a fanned out strawberry. Thank you! Perfect for my diabetic man for Valentine’s Day.
