Michelle is back in town. For those that didn’t know she was in south FL seeing a special doctor for her eczema. She is back and still getting treatment (although from another new doctor). She will be giving an update soon. I filmed Madison’s 4 month update this morning and it will be going up tomorrow. I can’t believe she is officially turning 4 months today. Crazy. Last night Michelle and I stayed up late once again because we were planning out a few new projects plus cleaning out our emails and organizing a huge stack of recipe ideas. We have so many ideas we can’t wait to share with you!

Today we are making an easy biscotti recipe with ingredient suggestions to make your own biscotti. You can really have fun with customizing the flavor. We used a mix of almonds and sunflower seeds for our base.

We love biscotti. They are perfect for dunking into our coffee, which you know we love a good cup of coffee.

This was one of those recipes that we played around with on and off for a long time. We finally got the recipe that worked!

It taste amazing.

The texture of these biscotti are nothing like you will find in store bought ones.

These are super light and airy. Melt-in-your-mouth cookie with a soft crunch.

Due to them being light they are a bit delicate, so make sure they cool completely and store them in the refrigerator.

You can dehydrate them if you want them raw, but we prefer baking them as it really brought out the nutty flavor. You won’t even miss the sugar.

sugar-free biscotti (gluten-free, grain-free, vegan)

A simple healthy recipe for homemade biscotti. Sugar-free grain-free gluten-free biscotti recipe that you can customize to make your own biscotti flavor. This biscotti recipe is also egg and dairy-free.

  • Prep Time: 5 minutes
  • Cook Time: 45 minutes
  • Total Time: 50 minutes

Ingredients

Scale
  • 1 cup sunflower meal (4oz)
  • 3/4 cup coconut flakes (2oz)
  • 1/4 teaspoon sea salt
  • 3 tablespoons almond butter (1oz)
  • 12 teaspoons vanilla extract (optional)
  • 1/4 teaspoon liquid stevia
  • 1 tablespoon water if needed

Instructions

  1. Preheat oven to 300 degrees.
  2. Place all the ingredients, except water, into a food processor.
  3. Pulse together.
  4. Add water if needed.
  5. You want the batter to form a ball, but not too wet.
  6. Once batter is together place onto a parchment paper.
  7. Using your hands mold into a long log shape.
  8. Slice and place slices onto cookie tray.
  9. Bake in oven for 45 minutes to 1 hour.

Nutrition

  • Serving Size: makes 8 -10 biscotti

Substitutions:

You can use any nut or seed meal for the base of biscotti.

You can use any nut or seed butter for the nut butter.

If you aren’t a fan of stevia, you can omit or use 1-2 tbsp maple syrup and omit the water.

You can also add in some cinnamon, vanilla, or citrus (orange, lemon) to jazz up these sugar-free biscotti.

You can make it your own! Flavor it the way you like.

Hi girls!! Just wanted to let you know I made these and they were fabulous! I added some dairy free chocolate chips and some pistachios into the mix to give them a little extra something. This is an awesome recipe as a base for any biscotti, or cookie I think really. Great with a coconut milk hot chocolate πŸ™‚

What brand of stevia do you use? I can’t tolerate the aftertaste. Also I’d like to hear your thoughts about some reports of infertility with the use of stevia. I love your blog. Thank you so much for sharing your thoughts and grooves ideas!

We like sweet leaf and wholefoods brand for stevia. I do not really have any thoughts on infertility and stevia, just interesting to me. Everyone needs to do what feels right to them. Thank you for your support!! πŸ™‚

Any experiences of making these with protein powders? Either with hemp or brown rice. Maybe it would work if the amount of coconut and/or sunflower seed meal were decreased? The goal is to increase the protein content. Any ideas?

We have not as protein powders have a completely different texture than the coconut and seeds do. Great idea though we will have to work on a protein biscotti.
