Healthy dessert pizza recipe (gluten-free, grain-free, dairy-free, low sugar)

A healthy and fun dessert recipe. Gluten-free grain-free dairy-free low sugar dessert pizza made with a plantain crust and topped with avocado cream and sugar-free pumpkin granola. Can be made 21 day sugar detox approved using parsnips and omitting sweetener in cashew cream.

Chocolate pizza crust

  • 1 large plantain (7oz or 200g after being peeled)
  • 1 tablespoon coconut oil
  • 2 whole eggs
  • 1/4 teaspoon sea salt
  • 2 tablespoons cocoa

Cashew cream

  • 2/3 cup cashews (soaked and rinsed)
  • 1 tablespoon coconut oil
  • 12 teaspoons vanilla extract
  • 1/4 cup coconut milk (full fat)
  • few drops stevia or 1-2 tablespoons maple syrup (sweeten to taste)

Instructions

  1. First make the chocolate crust.
  2. Preheat oven to 350 degrees.
  3. Peel plantain.
  4. Place plantain, eggs, coconut oil and sea salt in a blender. Blend until smooth.
  5. Lightly grease an 8-9″ pan with coconut oil. Pour chocolate crust batter into pan.
  6. Bake 12-14 minutes in oven. Remove and let cool before removing crust from pan.
  7. Next make cashew cream.
  8. Soak and rinse cashews.
  9. Place cashews, coconut oil, vanilla, coconut milk and sweetener of choice into a blender.
  10. Blend until smooth.
  11. Begin to build pizza. Gather toppings of choice.
  12. Spoon cashew cream over chocolate crust.
  13. Sprinkle with whatever toppings you desire.
  14. Slice and enjoy.
