Chicken bacon bbq plantain fries with goat cheese

  1. Preheat oven to 350 degrees.
  2. Make our bbq plantain fries following these directions – instead of slices cut plantain into fries.
  3. While fries are baking make bbq sauce following these directions.
  4. Set bbq sauce aside.
  5. Thinly slice or shred chicken breast.
  6. In a bowl toss sliced chicken breast with bbq sauce. Set aside.
  7. Once bbq fries are done baking start layering first with bbq coated chicken slices.
  8. Next top with bacon (break into pieces) and end with goat cheese.
  9. Place back into oven and bake for another 3-5 minutes or until cheese is melted.
