As you can see the new trend that has been happening over here at purelytwins. Our blog posts have been getting up later and later each day as we tend to SLEEP in now as this is the only time we get some zzzz. 🙂 We have learned to let go of putting the pressure on ourselves to get our blog post up before 9 am. One thing we have learned from others about blogging is to keep a regular schedule; well we have had to adjust our blogging schedule to be more flexible. To be honest, we were not sure what was going to happen with the blog once Madison was here. And we still don’t. We are taking it day by day, and you are along for the journey! We are just grateful to be able to get a new post up for you to enjoy. Thank you for being understanding and patient with us.

Today’s recipe is one that Lori was able to enjoy as when we made it a few weeks ago Michelle was not eating eggs and recently not eating any spices.

A healthy yummy breakfast made in under 5 minutes from just a few ingredients.

We love apples. Well let us back up for a moment. Michelle has always loved apples since we were kids. Lori had to work her way up to liking apples. In college is when she finally started to enjoy them. We would have one apple a day with almond butter just about every day during college either with our breakfast or afternoon snack. Mmmm, maybe we should of added almond butter to this apple pie stack!

This recipe for apple pie pancakes is:

  • easy to make
  • made from a few ingredients
  • can be made dairy-free
  • healthy way to start the day
  • gluten, grain and soy free
  • has no added sugars
  • and delicious

You might find you no longer need a slice of apple pie with ice cream. These apple pie pancakes could be your quick fix when temptation strikes. Well it sometimes works for us, haha sometimes you just need a good slice of apple pie.

How to make gluten-free, grain-free 4 INGREDIENT apple pie pancakes that serve 1.


This recipe was inspired from our single serving strawberry shortcake recipe.

Now that apples are in season and pancakes are always a good decision, you can enjoy them together for a healthy fall inspired breakfast!

You can enjoy these pancakes any time of the day. Yep, you can have them for breakfast, as a snack or dessert!

And as we mentioned above add a layer of almond butter for a healthy fat and protein boost!


Single serving apple pie pancake recipe (gluten-free, grain-free, can be made dairy-free)


A healthy breakfast made in under 5 minutes. Single serving apple pie pancakes that are gluten and grain-free. Can be made dairy-free using coconut or almond yogurt. Two ingredient pancakes paired with apples and yogurt for a complete meal.

  • Prep Time: 2 minutes
  • Cook Time: 5 minutes
  • Total Time: 7 minutes



  • 2 eggs
  • 2 tbsp coconut flour


  • 1 apple
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves
  • yogurt of choice


  1. Place the 2 whole eggs into a bowl and mix with the 2 tbsp coconut flour.
  2. Mix until smooth, then cook on a skillet to make 2 pancakes.
  3. Once pancakes are cooked set aside.
  4. Dice up apples and place into skillet with a little coconut oil and spices.
  5. Cook for a few minutes to warm up the apples.
  6. Place one pancake on plate and top with yogurt.
  7. Next layer with sautéed apples.
  8. Then place the second pancake on top of apples.
  9. Add more yogurt and apples, as much as you desire.
  10. Enjoy.

I am always excited to wake up and eat breakfast each morning, so I am really looking forward to testing these yummy cakes out. I often wake up earlier than my hubby, so it’s nice to have the single serving option. Thanks!

we don’t think so, but again we are used to the flavor of it, plus with the apple pie topping helps mask the flavor.

No, what I taste is egg – I also added 2 drops of Stevia Vanilla – but still tastes like egg.
I also used the Apple Pie Jam I already had in the frig.

Nothing against eggs – well not before last Fall. Maybe I just ate too many eggs from the grocery store (not anywhere as good as from healthy chickens from a farm instead of those factory farms) At least that is the only thing I can think of as to why I don’t eat eggs anymore.. And I just to love to fry eggs with the yellow runny.. yummy – or used to be for me…

So some of you may not taste the egg like I do…….

Those look delicious! And honestly, I’m going to (and many others, too) read your posts regardless of what day or time they are posted. No reason to be pressured to have it up at a certain time. That is what makes blogging so great- it is flexible!
