Anyone watch The Voice? We love that show and are really loving this season with Gwen and Pharrell. There are a lot of talented singers, one thing we are not good at ๐Ÿ˜‰ We wish we could sing. Poor Madison has to listen to our not so in tune voices as we sing her to sleep. Other news, things are good over here. Thanks for all the sweet comments and tips to help Lori and Madison. We cannot get over she will be turning 3 weeks this Saturday. Crazy.

Madison likes her cookies too haha. We know she is going to love baking in the kitchen with us once she gets older. We cannot wait!

Grain-free, egg-free, gluten-free 4 ingredient low sugar peanut butter cookie recipe.

The past few weeks we have been craving cookies and Michelle is still not eating eggs, so we had to come up with a cookie recipe that hit the spot without using eggs. In addition, we needed a QUICK recipe as we don’t have much spare time anymore waiting for things to bake. We looked at some of the ingredients we had on had and thought why not? Let’s see if this works.

10 minutes later we had the most amazing cookies! We were blown away. We each enjoyed one and hit one another in shock as we couldn’t believe the recipe worked! We quickly ran and gave a cookie to Gary and our mom to see what they thought…they absolutely loved them. ย Ever since our mom was here we have made a version of these cookies every day from using different nut and seed butters. Yep we have a few more flavor ideas coming!

Come and join us in the kitchen and make some cookies!

We adore these cookies so much. The texture is perfect. Soft. Light. And a slight crunch.

And we think you will too!

Most 4 ingredient cookie recipes out there have a lot of sugar in them. Don’t get us wrong we like sweet things, but our bodies prefer less sugar. Therefore, we only did 2 tbsp of a sugar which provides just the right amount of sweetness.

If you like to use stevia for sweetness, replace the maple syrup with 2 tbsp milk of choice and add a few drops of stevia.

Not only are these cookies made from just 4 simple ingredients they can easily be customized to your individual liking.

If you eat paleo simply use sunflower seed butter or almond butter!

And if you do not like cooking your food you can safely eat these cookies RAW! Or dehydrate them a few hours for a nice simple raw cookie.

Why we used gelatin in these cookies?

We love gelatin. Ever since incorporating it into our diet back in 2013 we’ve been hooked. We love how it is gut friendly, and a nice way of getting in a little bit more protein and nutrients into our diet. We used Great Lakes green bottle gelatin, we get it off Amazon (no affiliation).

Why did we use peanut butter?

Who doesn’t love peanut butter ๐Ÿ˜‰ We have made these with just about every nut and seed butter out there and they have turned out great.

Why did we use coconut flakes?

It is more for texture reasons.

Why we use maple syrup?

We love it. But we have made these cookies with coconut nectar and stevia and love them just as much.

Baking is optional for these 4 ingredient cookies. We just prefer a nice warm cookie right out of the oven.

Just 10 minutes and you will have a “healthy” cookie that you can even enjoy 2 ๐Ÿ˜‰ We did!

10 minute cookies made from just 4 ingredients! Protein cookies made without gluten, grains, eggs, and dairy. Peanut butter and gelatin to make a protein rich cookie.

  • Prep Time: 2 minutes
  • Cook Time: 10 minutes
  • Total Time: 12 minutes
  • Yield: makes about 6 -8 cookies 1x

Ingredients

Scale
  • 1/2 cup peanut butter or any nut butter
  • 2 tablespoons coconut flakes
  • 2 tablespoons gelatin
  • 2 tablespoon maple syrup

Instructions

  1. Pre heat oven to 350 degrees.
  2. Place all ingredients into a bowl.
  3. Mix together until it forms a dough.
  4. Scoop onto baking tray.
  5. Dough is thick.
  6. Flatten cookies if you desire a flat cookie.
  7. Bake for 10 minutes.
  8. Let cookies cool on cooling rack a few minutes.

Notes

If you flatten cookies it provides a more crunchy cookie.
Can enjoy cookies raw for a yummy dough ball cookie or dehydrate them for a few hours.

Substitution ideas:

We used peanut butter but any nut or seed butter would work just fine.

For the gelatin you can use any protein powder of your liking or you can try any ‘flour’ of your liking.

For the coconut flakes you can use a nut meal.

For the maple syrup you can use stevia (we gave ideas above) or coconut nectar.

I love this recipe! My mom watches the voice and I sometimes watch a few minutes when I get home at night when she does!

I like baked cookies! I tend to get a cravings here and there and I always whip up a “single serve” type recipe so I don’t have a bunch laying around! These seem so easy, I will try them for sure!

thanks Amanda! And we adore baked cookies too!

I am making these!! I made your pumpkin chocolate chip cookies last night with 5 drops of doTERRA OnGuard blend instead of the pie spice mix. They are SOOOO good!

yes you can use coconut butter instead of PB, and almond meal instead of coconut flakes, and not sure about the egg whites, you can give it a try.

Misty August 6, 2015 - 12:02 pm

Are almond flour and almond meal the same thing?

These cookies look so yummy! I have hazelnut butter and liquid stevia at home. Maybe I’ll get some almond milk and gelatine to try this recipe =) Syrup is a no-no for me.

I like that you can bake them in the oven – I don’t have a dehydrator. Maybe I will add some chopped hazelnuts for texture?

purelytwins August 6, 2015 - 8:19 pm

Yes they are the same thing. Sounds yummy! We love hazelnuts.

amanda jewell October 15, 2014 - 6:30 pm

hey ladies! green can of gelatin (hydrolyzed) or red?

purelytwins October 15, 2014 - 6:44 pm

it’s the green we give the link to the one we used.

sophie October 15, 2014 - 6:55 pm

Would this recipe work with gelatin from the red canister?

purelytwins October 15, 2014 - 9:08 pm

Sophie, not sure, we think so. Give it a try. Maybe do just 1 tbsp and do 3 tbsp coconut flakes.

Brittany @ Delights and Delectables October 15, 2014 - 10:52 pm

Yum! I have been trying to eat more gelatin, so I’m excited to try!!

purelytwins October 16, 2014 - 2:35 pm

Let us know how you like them!

Rachel October 22, 2014 - 4:50 pm

Is there a vegan substitute for the gelatin?

purelytwins October 22, 2014 - 6:13 pm

you can use a vegan protein powder

Misty August 7, 2015 - 5:00 am

I can’t find that type of gelatin where I live. Is it necessary to swap it for protein powder or some flour? I was wondering if I could just do without it.

purelytwins August 7, 2015 - 10:51 am

You can order the gelatin off Amazon online, but yes you can use protein or any flour to replace it.

Kelly August 20, 2015 - 4:14 pm

Can you use a natural sugar free sweetener instead of maple syrup?.

purelytwins August 20, 2015 - 9:09 pm

Kelly you can use stevia but you will have to replace the liquid from the maple with coconut milk or milk of choice.

sophie November 30, 2015 - 9:23 am

For this recipe, do you typically use the “orange canister” gelatin (the one that gels) or the other one?
Thanks!

purelytwins November 30, 2015 - 8:44 pm

The green canister is the gelatin we use in this recipe. We have used the orange-red can one before and it provide extra chewy cookies.

These look so yummy and easy! One question is the Great Lakes Gelatin vegan? If not can I use agar? Thanks for all the wonderful content! ๐Ÿ™‚

purelytwins June 13, 2019 - 7:43 pm

We are pretty sure it is not vegan. You can always try agar, not sure it will provide the same texture as we have never worked with it.
