Simple healthy broccoli avocado waldorf salad (gluten-free, grain-free, dairy-free, egg- free)

A simple healthy waldorf salad recipe made with broccoli, celery, walnuts and avocado! A great side dish to any meal. A fun way to eat broccoli.

Ingredients

  • 1 head of broccoli, steamed and chopped (about 34 cups)
  • 1 large avocado
  • 1 cup sliced celery
  • 1 cup sliced red grapes
  • 1/2 cup walnut pieces
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • handful fresh parsley

Instructions

  1. Take avocado and spoon into a small bowl.
  2. Then add in mustard, apple cider vinegar and black pepper and sea salt.
  3. Stir together.
  4. Place broccoli and celery into large bowl.
  5. Pour avocado dressing over broccoli and celery and toss together.
  6. Add in red grapes and walnuts with parsley.
  7. Toss until everything is well combined.
