We had an interesting day yesterday. It didn’t feel like a Tuesday. We had another breath-taking day here in Charlotte. We are getting spoiled with this nice weather. Makes both of us eager for fall!! We had a lot to do yesterday, but managed to squeeze in some yoga, practiced two new recipes, edited videos, went for a walk, emails and got our eyebrows threaded. Yep threading! Anyone try it? Β We have done it once before but it has been awhile. Our poor eyebrows needed a tune up! We just love it. We like threading over waxing for the eyebrows. It’s safer and doesn’t hurt as much. And we feel lasts longer.

Not really sure if this was the best to bring up on recipe day, but oh well. Hopefully you are still sticking around for the recipe.

This was our first time making our own waldorf salad. Our mom and Michelle love a good waldorf salad. Lori is a little picky and doesn’t like mayo, so we had to seek an alternative.

We love how creamy avocados can be, so it works beautiful in this dairy-free waldorf salad recipe.

We love all the different textures going on in this salad from the crunchy walnuts and celery to the smooth creamy avocado dressing and grapes.

This is a great way eat broccoli! Well besides broccoli breadsticks.

Traditional waldorf salad is made of apples, celery and walnuts mixed with mayonnaise.

Our recipe is made of red grapes, celery, walnuts and avocado! Not too bad, right? Lori is not a fan of mayo so avocado was the perfect substitute to make our creamy dressing!

This broccoli avocado salad is light and refreshing to enjoy as an appetizer or serve along side your dinner.

Simple healthy broccoli avocado waldorf salad (gluten-free, grain-free, dairy-free, egg- free)

A simple healthy waldorf salad recipe made with broccoli, celery, walnuts and avocado! A great side dish to any meal. A fun way to eat broccoli.

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Ingredients

Scale
  • 1 head of broccoli, steamed and chopped (about 34 cups)
  • 1 large avocado
  • 1 cup sliced celery
  • 1 cup sliced red grapes
  • 1/2 cup walnut pieces
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • handful fresh parsley

Instructions

  1. Take avocado and spoon into a small bowl.
  2. Then add in mustard, apple cider vinegar and black pepper and sea salt.
  3. Stir together.
  4. Place broccoli and celery into large bowl.
  5. Pour avocado dressing over broccoli and celery and toss together.
  6. Add in red grapes and walnuts with parsley.
  7. Toss until everything is well combined.

Nutrition

  • Serving Size: serves 4 -6

We enjoyed this salad for two nights with our dinner. We would recommend eating it within 1 – 2 days.

We cannot wait to make this again!

Thinking of making this for a going away party at work for an avid broccoli/avocado lover… It will be made the night before and kept in a fridge for most of the day before party… Will the avocado brown?
