to make individual plantain bread

  1. Place plantain in vitamix blender with 2 eggs and 1/2 tablespoon oil.
  2. Blend until smooth.
  3. Grease 6 in pan with 1/2 tablespoon oil and bake at 350 for about 15 minutes.

while the bread bakes:

  1. Next cook up onions in a little coconut oil.
  2. When onions start to brown add in the balsamic vinegar.
  3. Remove from heat.
  4. Slice up figs.
  5. When bread is done baking let cool a few minutes.
  6. Then slice bread in half.
  7. Begin to layer sandwich.
  8. Carefully place sandwich on skillet to melt cheese.
  9. Or may eat chilled.
