individual plantain bread
2 eggs
1/2 plantain (100 grams)
1 tbsp coconut oil
sandwich ingredients
a good slice of goat cheese
3–4 figs
a few fresh basil leaves
handful fresh arugula
1 tablespoon balsamic vinegar
a few slices of red onion
Instructions
to make individual plantain bread
Place plantain in vitamix blender with 2 eggs and 1/2 tablespoon oil.
Blend until smooth.
Grease 6 in pan with 1/2 tablespoon oil and bake at 350 for about 15 minutes.
while the bread bakes:
Next cook up onions in a little coconut oil.
When onions start to brown add in the balsamic vinegar.
Remove from heat.
Slice up figs.
When bread is done baking let cool a few minutes.
Then slice bread in half.
Begin to layer sandwich.
Carefully place sandwich on skillet to melt cheese.
