Yesterday morning started off rough. It was rainy and just blah. But luckily it turned into a lovely hot sunny day. We made it a casual Tuesday in Purely Twins headquarters with messy hair and comfy clothes. One great thing about working from home is that you don’t always have to ‘get dressed’.  One bad thing about working from home is that you never ‘get dressed’.

Once the sun finally decided to come out we took advantage and took our daily walk. It was HOT! We were both sweating within 15 minutes of our walk. Inside our purely fit club we discussed the benefits of walking for health and weight loss. We are big fans of walking when you can.  Anyone else fans of walking? We love it!

And speaking of being HOT – ice cream always sounds refreshing.

Today we are sharing our wannabe dairy-free ice cream recipe.

Why wannabe?

Good question.

Michelle actually thought of the name yesterday on our walk. Obviously you talk about recipe names when you walk?!

Wannabe is for all those hard-core ice cream fans that probably won’t consider this true ice cream. So that is why we threw in wannabe to the title. This is ice cream to us but we understand it’s not the real McCoy.

So before we get the comments… that’s not ice cream. We hope this helps clarify.

We love both full fat real ice cream (mainly gelato), but we also love a good dairy-free ice cream. Either from coconut milk or nuts. We aren’t fans of soy based ones. Really we are not fans of soy in general.

2 ingredient raw dairy-free peach ice cream purelytwins

This recipe is nothing new. We actually created this two ingredient peach ice cream back in 2011. We made it by accident.

If you love peaches then you will enjoy this 2 ingredient peach ice cream. It goes great with raw no bake cookie sandwiches!

It works best with frozen peaches, which you can take fresh and freeze the peaches yourself like we did. This ice cream is not sweet! So if you enjoy sweet please add in some honey or maple syrup to taste.

No churning or waiting for this ice cream. As soon as you are done blending it is ready to eat!!

*NOTE: You can use any frozen fruit. We have made this with figs and it came out great!

2 ingredient wannabe raw dairy-free ice cream

A quick and healthy ice cream alternative. A real whole food ice cream naturally sweetened that is made from nut butter and fruit. Raw. Dairy-free. Ice cream made in just a few minutes.

  • Prep Time: 5 minutes
  • Total Time: 5 minutes

Ingredients

  • 2 medium peaches (about 2 cups chopped, around 12-13 oz)
  • 1/2 cup macadamia nut butter (or any nut or seed butter)
  • stevia, maple or honey to taste (optional)

Instructions

  1. If peaches are not frozen, slice them and freeze overnight.
  2. Then blend frozen peaches with nut butter in a high speed blender like a vitamix.
  3. Blend until creamy. This will take some time.
  4. Add in additional sweetness if desired and continue blending.
  5. Scoop and enjoy.

YUM!!!! This looks so good! Just curious if there was a reason you used macadamia nut butter! I Don’t have any on hand and I’m wondering if another nut butter would work 🙂

we use mac nut butter because we love it, but yes any nut would be fine.
