Gluten-free grain-free 5 ingredient almond butter & jelly sandwich

easy and healthy natural pb and no sugar added jelly sandwich

A quick and healthy PB & J sandwich made from a few ingredients. Gluten-free. Grain-free. Dairy-free. Made with no sugar added jelly. Almond butter or any nut butter to keep it paleo.

bread

  • 1/2 plantain, peeled (100g)
  • 2 eggs
  • 1 tablespoon coconut oil

homemade no sugar added jelly

  • 1 cup frozen berries
  • 2 tsp gelatin, we use this brand

nut butter

  • 12 tablespoon of your favorite nut or seed butter

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Place plantain and eggs into blender.
  3. Spread 1/2 tablespoon coconut oil in the bottom of 6 in circle pan.
  4. Blend the other 1/2 tablespoon oil into blender with eggs and plantain.
  5. Pour batter into pan.
  6. Bake for about 15 -18 minutes.

To make jelly

  1. Heat up a small saucepan on medium heat.
  2. Place the 1 cup berries into pan and let warm up.
  3. Once berries are no longer frozen pour into blender.
  4. Blend berries with the gelatin.

Assemble sandwich

  1. Cut bread in half.
  2. Spread on nut butter on one side of the bread.
  3. Spread as much jelly on top of nut butter.
  4. Place the other half of bread on top.
  5. Enjoy!
