two-bite protein brownies

Yesterday we had a massive rain storm. It rained pretty much all day long.  That storm definitely made up for not having any rain for the past few days. We were feeling spoiled in a way with all the amazing sunlight we were getting. Guess you do need a good rain storm every now and then, right? Who likes a good rain storm? Speaking of rain we were also talking the other day about how we needed to get ourselves some rain boots. It has been on our list to purchase for a few months now. Guess we are just waiting for that perfect storm to make us go buy some, haha.

When it’s raining you might crave something comforting or satisfying. Are we right? Anything to help get through the rainy day, right? For us, that would be anything with chocolate.

These two-bite brownies were inspired by our chewy brownie that we made several years ago over on pure2raw. And just like our key lime cheesecakes we felt those brownies needed an upgrade. We did play around with the recipe some to update it with different ingredients as wanted to make them grain-free.

We’re always looking for delicious little treats to make an excuse in making. Because brownies just like cookies can bring a smile to any rainy day 🙂

If we told you how many tries it took for us to get these two-bite gluten-free grain-free protein brownies just right, you might think we are crazy. What can we say… we wanted them just right.

We promise these mini brownies are fun – kids will love them, and with a scoop of ice cream and drizzle of chocolate sauce, they make a pretty fab dessert.

Soft moist crumb in each bite. You could polish them off in one bite if you wanted 😉

The ingredient list is pretty short too with having just 7 ingredients! We love it when we can keep the ingredients simple.

Substitution ideas:

Instead of hemp protein you can use any protein powder of your liking. You can use a nut or seed meal as well. The final texture might be a little different.

Instead of an egg you can try making vegan with flax or chia gel. We’ve not tested this so unsure of how it will turn out. Our original recipe for these brownies did work without an egg.

Hey ladies…would these be totally awful without the sugar or do you think they would be okay?

purelytwins May 16, 2014 - 5:19 pm

it would be very very bitter without the sugar, and the texture would be different. you can try replace with applesauce or banana puree if you want.

Carolyn Walden May 17, 2014 - 7:39 am

I bet pumpkin or sweet potato would work too!

cherie May 16, 2014 - 9:16 pm

These look amazing and just like regular brownies. I’ve heard so much about coconut sugar but it’s still new to me. I’ll have to look into it and its benefits.

Thanks for sharing this recipe. Perfect for those days I want something sweet but don’t want to ruin my clean eating!

Cassidy July 23, 2014 - 12:12 am

Just made these tonight! I didn’t have coconut sugar so I used soaked dates. They turned out delicious!! Now I know what the rest of my hemp protein powder is going to be used for! Thanks for the awesome recipe!

purelytwins July 23, 2014 - 1:49 pm

Cassidy so glad you enjoyed the recipe and thanks for letting us know it worked with soaked dates!!

Narah August 17, 2014 - 11:53 pm

What did I do wrong? Mine came out super crumbly. Like eat it with a spoon crumbly. Great flavor, they just did NOT hold together.

purelytwins August 21, 2014 - 7:49 pm

Narah maybe they were over cooked? Try reducing the cooking time.

Elizabeth September 6, 2014 - 6:35 pm

I love these – they are just the right size for a snack and they came out very moist but I have to make sure I cool them completely before removing them from the silicone pans next time. I didn’t have hemp protein (never even heard of it!) but had casein protein on hand and it is very dense so it made a great substitute. Thank you so much for the recipe!

purelytwins September 7, 2014 - 6:52 am

Elizabeth so glad you enjoyed the brownies 😉 they are a fav recipe of ours!
