What sugar do we prefer? 

Our top two sweeteners are stevia and maple. Next up would be coconut sugar, dates, and honey. Although if we are baking we do not use dates or honey, we use those only in raw recipes.

We are happy to announce that today’s recipe is sweetened with stevia!! Since stevia had the most votes we have a feeling many of you will enjoy this recipe!

And as we have mentioned, we have one a-m-a-z-i-n-g vanilla cake recipe to share. It is sweetened with stevia and has just 7 ingredients plus a delicious 2 ingredient frosting!

This vanilla cake reminds of pound cake, but healthy!  It dense and moist. Full of flavor. And super easy to make. 

We actually made this delicious cake in our own S30 vitamix blender. You really can make just about anything in it! First we filmed us making homemade coconut butter, which only took 1 minute!

 7 ingredient vanilla grain-free, sugar-free cake made in vitamix s30 personal blender

As we mention in the video if you cannot find plantains, here are some ideas to do:

1. Try a green/yellow banana

2. Try 4 eggs instead 3 if you use a more ripe banana or sweet potatoes

3. If you don’t use a plantain and you use something else you might have to add in additional starch, like arrowroot or tapioca to the batter

4. If you cannot have coconut butter, try cashew butter if you want to keep it a neutral vanilla flavor

We have not tested any of these, so unsure of the final outcome.  We have not tested this to be vegan (egg-free) so unsure how flax or chia gels would turn out. Sorry.

How to make a stevia sweetened no flour vanilla pound cake recipe

We love this cake. It will quickly become a favorite no-sugar cake.

It does have a slight plantain flavor to it since we used stevia. But we find it to be amazing especially with the 2 ingredient coconut butter frosting on top and of course… sprinkles!!

Sugar-free grain-free vanilla cake

A simple healthy recipe made without flour, grains, sugar, and dairy. Vanilla cake made from plantains, coconut butter, coconut milk, eggs, and stevia!

  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
  • Total Time: 30 minutes

Ingredients

Scale
  • 1 large ripe plantain (need 7oz after being peeled)
  • 3 large eggs
  • 1 teaspoon vanilla bean powder
  • 1/2 cup coconut butter (4 1/2oz)
  • 2 tablespoons coconut milk
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon liquid stevia

Frosting Recipe

  • 1/4 cup coconut butter
  • 2 tablespoons coconut milk
  • few drops of stevia (we did about 8 drops)

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel plantain.
  3. Place plantain, eggs and coconut butter into your Vitamix blender.
  4. Blend.
  5. Next add in apple cider vinegar, coconut milk, vanilla bean powder, and stevia.
  6. Blend.
  7. Grease 6 inch pan or cupcake pan.
  8. Pour batter into pan.
  9. Bake from 20-30 minutes depending on your oven and size pan.
  10. Cool and enjoy plain or top with frosting.

Frosting directions:

  1. Mix until smooth and creamy.
  2. Top cake with frosting.
  3. Slice and enjoy.
  4. We got 6 slices. And topped with sprinkles. We use India Tree sprinkles that we bought from whole foods!.

Oh man! This looks amazing! I’ve always been more of a vanilla cake fan (particularly FUNFETTI!) but after discovering a paleo chocolate cake recipe that my family and I are LOVING that’s been a favorite. Hey guys,
I am a huge fan of chocolate cake but a good vanilla cake goes a long way as well! 🙂 I’d never say no to either one (as long as I knew they were semi-healthy). I’m not a huge fan of sprinkles, tbh, but sometimes they do give a good flavor and I like them more when paired with a thicker frosting (who knows why). Anyway just wondering would it be possible to make this cake with applesauce versus the coconut oil? I can’t have coconut…or at least I don’t want to chance it as of yet.

This cake was great! My plantain was very green, I couldn’t even peel it I had to cut the skin off. Next time I might add a little bit of agave to make it a little sweeter, but it was delicious!

Last week I made the most incredible cake (not healthy and definitely not sugar free): chocolate stout cake with sour cream frosting. There was something like 6 sticks of butter in it. It was so good, and it was one of those cakes that was so dense and rich that you couldn’t eat more than a few bites at a time.

Personally if i had to choose between chocolate OR vanilla (i can’t believe you’re making me choose here) I would go with a vanilla cake. BUT if you offered me a vanilla cake with chocolate frosting and sliced strawberries and colorful sprinkles I would be one extremely happy girl 🙂

I am allergic to apples and I am wondering if you can use any kind of vinegar in this cake like rice, champagne, fig, white balsamic vinegar? I am also very sensitive to coconut butter, could I substitute cashew butter instead? I know the flavor would be different, but…

Normally I would say chocolate, but if this cake is anywhere near as good as your cinnamon bun one with the plantains, I’m in 🙂 and sprinkles give it a nice crunch!
I do have a question too…can I use vanilla extract in place of vanilla bean powder? I don’t think I could find the powder and I know vanilla beans are very expensive! Thanks 🙂

This cake seems like it must be good. Using plantains was a great pick and anything vanilla with sprinkles is my favorite. This cake is amazing – I can’t believe it comes out so good with no flour or baking powder to help it rise! I’m totally eating it right now for breakfast.

So… just fyi – not having a Vitamix (like most I assume? 😉 Here’s advice on how I had to do the coconut butter – it’s a little harder in a small food processor:

For starters *don’t* put the coconut in a paper bag if you buy in bulk – (my mistake) – the paper soaks up the oils and you need those to help it liquify! Use liquid (instead of powdered) vanilla & add it in to get the process going. Drizzle in melted coconut oil as you’re mixing (prob used less than a tbs altogether)… it took about 10mins to get it to a sticky (but clumpy) consistency. It worked perfect though once pureed with the plantain and eggs (I just used egg whites – works too). It made a pretty nutty frosting – which was really good.

I think the sprinkles are the perfect tiny amount of sugar to stop you from having cravings after eating something sweet without the *kick*! Maybe that just happens to me…

I love both vanilla and chocolate.. it really depends on my mood at the time 🙂
I definitely like having some sort of sprinkles though, the texture and flavor is so much better that way!!

I’m not generally a huge cake fan…but I just found a gluten free company in kuwait (where I live) that makes the most divine melt in your mouth chocolate cake! And no frosting or sprinkles!

I’m definitely a fan of both but if it came down to it vanilla cake! Then you can top it with anything and won’t be too powerful. And of course who doesn’t love sprinkles! This cake looks amazing. Definitely can see why you ladies had this for your birthday. Yum!

Not sure if I can win being in Australia, but I’m certainly a chocolate girl for most things, but when it comes to cake vanilla often wins…add some chocolate frosting and amble a little sprinkled chocolate and well you have a perfect combination.

Really though, this was super great just the way it is (with stevia). To all people who dislike the taste of stevia: try this recipe.
