one pot cuban skillet dish

A quick healthy dinner that is made in under 20 minutes. Made from real fresh foods to create a delicious cuban inspired meal.

Instructions

  1. Peel plantain.
  2. Chop into slices.
  3. In a large skillet (we used a cast iron skillet) place 1 tablespoon coconut oil into skillet over medium heat.
  4. Add in chopped plantain slices. Cook for about 6-8 minutes.
  5. Next add in sliced peppers and shrimp.
  6. Continue to cook.
  7. Add in lime juice and spices.
  8. Next add in fresh tomatoes. Continue to cook for a few more minutes.
  9. Cook until shrimp is cooked all the way through.
  10. Remove from heat.
  11. Place one pot dish into a bowl and top with fresh cilantro.
  12. Enjoy.
