We tend to catch ourselves talking about the past frequently. Discussing what we did and ate when we were growing up. How our style of eating has changed so much of the years. It’s crazy to look back and reflect on our journeys as we have tried and did so many different things. And we still have a lot to learn and experiment with. Exciting. We are such foodies at heart. We adore foods. All types of foods.

We love taking basic recipes and finding ways to change them. To make them a little ‘healthier’ and fun. The grilled cheese is the classic comfort food too. It just screams comfort.

And… that’s the one recipe that we felt like playing with – the classic grilled cheese sandwich. Did you know there is National grilled cheese month? Who knew?! We totally missed that celebration. Better late than never, right?

Of course this grilled cheese has been modified to be gluten and grain free. Along with soy and nut free. It does contain dairy, but if you used a dairy-free cheese alternative you could have a delicious allergy-friendly grown-up grilled cheese.

Grown-up avocado tomato grilled cheese sandwich for one!

Grilled cheese is one childhood favorite sandwich for us both. And since Lori is pregnant, she seems to occasionally crave some childhood comfort foods as you have seen from previous carby cheesy recipes! We both have always wanted to do a grown-up kind of grilled cheese. One that fits our taste buds currently. Not sure why it has taken us so long to make this as we have seen many versions all over pinterest. Which is a dangerous place to play on when you are hungry.

As you know we use our 3 ingredient grain-free bread for just about everything over here as we find it to always hit the spot! Plus avocados are tasting really good lately so we decided to finally make upgraded grilled cheese. We think you will love it! Just like with most of our recipes you can alter it to fit your individual likes and needs. Use as much cheese and guacamole as you like. You can use just avocado slices instead of guacamole. And we left our tomato slices whole not chopped up in our guacamole as we were hoping it looked pretty for pictures. Not sure if that happened haha as this was a messy sandwich

Now making guacamole and grilled cheese is no rocket science. It’s rather easy. So we won’t bore you too much with the details.

This combo of avocado and grilled cheese is perfection. We’re so happy we finally made it! A keeper!

Really avocado mixed with anything makes a dish delicious in our eyes.

Now time to make a simple grilled cheese sandwich with guacamole, tomatoes, and melted cheese oozing out of delicious grain-free bread, which is darn good on it’s own.

Grown-up grilled cheese sandwich. Layers of cheese, tomatoes, and guacamole in between grain-free plantain bread. Great way to upgrade the classic comfort grilled cheese.

  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
  • Total Time: 25 minutes
  • Yield: 1 sandwich 1x


  • 23 fresh tomato slices
  • as much guacamole as you would like
  • 23 cheese slices of choice (we used goat cheese)
  • one plantain bread recipe or any two slices of your favorite bread


  1. Bake plantain bread, follow these directions.
  2. Slice tomato.
  3. Gather the guacamole and cheese.
  4. Once bread is made, slice in half and begin to build the sandwich.
  5. Layer with fresh tomato, cheese and guacamole.
  6. Close sandwich.
  7. Carefully heat up on skillet.
  8. Enjoy.
  9. Warning this is a little messy. But messy foods are better, right?

This sounds amazing! I love y’all’s plantain bread, but I have always wondered what size of pan y’all use to cook it because mine never comes out looking like bread you could use on a sandwich.

Becky we back in different pans, sometimes 8 in circle pan and other times bread loaf pan, sometimes we have done it in a 6 in pan. You can add about 1/2 tsp baking soda if you want more lift.
