Do you ever relive family memories? Do you like recreating old family favorite recipes into something a little healthier? We sure do.
We grew up with making recipes from the Pillsbury Complete Book of Baking (published in 1993). Our second oldest sister got the book and she started baking. She would invite us in to taste and sample her yummy treats. She was very talented. It was through her and her love for baking that we began our baking journey. And we’ve never looked back.
There were a few family favorites that we would make over and over again… pumpkin bars, sweet cinnamon quick bread and cookies ‘n cream cake (mmm we need to recreate that one). And there were a few bread recipes that we always enjoyed. Particularly a herbed oatmeal pan bread that was always a lovely addition to our dinners. These rolls were topped with this herb butter parmesan cheese, so delicious.
Now what we have today does not look anything like that recipe but it’s our updated current herb bread love. We think you will like this updated version as it’s made from our go-to 3 ingredient bread.
The funny thing is we aren’t bread bakers. We aren’t good with yeast. Luckily, these are yeast-free. This recipe is quick, easy and healthy. Pretty darn tasty too!

Grain-free goat cheese herb bread recipe.
We took our beloved plantain bread up a notch with adding in delicious goat cheese highlighted with delicate flavor of herbs.
Obviously, it would make a great addition to any lunch. Pair with a lovely green salad for a nice healthy bread option for your side.
Soft texture mixed in with bold flavors of herbs and goat cheese. This is really a delicious bread, don’t let the look fool you. It smells wonderful.
No yeast required either which means it is ready in under 20 minutes.
A great finger food to serve as an appetizer at a party or family dinner. Perfect to dip in warm pizza sauce to create homemade pizza breadsticks! That should go over well with the whole family.

grain-free goat cheese herb bread
A light yeast-free simple herb goat cheese bread recipe. Perfect bread to enjoy with any dish. Serve with warm tomato sauce for healthy cheesy breadsticks.
- 1 large raw green-yellow plantain (7oz after being peeled)
- 2 eggs
- 1 tablespoon coconut oil (you can use any oil of your liking)
- *optional: may add in 1/2 teaspoon baking soda for a lighter bread
- about 1/3 cup fresh goat cheese (or any cheese of your liking)
- 1 teaspoon italian seasoning blend (you can use any herb mix you like)
- Preheat oven to 350 degrees.
- Peel plantain.
- Place plantain, eggs and coconut oil into Vitamix or food processor.
- Blend until smooth.
- You have a few options for baking the bread in. Either a 6 inch pan for more thick bread, 7 or 8 inch pan for thinner slices, or in a muffin pan for individual bread rolls.
- Once batter is poured into pan, top with cheese and spice blend.
- Bakes for about 20 minutes. If using muffin pan they might bake in less time.
- Remove bread from pan.
- Best enjoyed warm.
